Chicken Pakodas
Ingredients
For the marinade:
250 gm boneless chicken- cut into 3 cm cubes
6-7 garlic pods
2.5 cm ginger piece
1/4 tsp white pepper powder
1/4 tsp salt
1/4 tsp red chilli powder
1/2 tsp garam masala
1 tsp coriander powder
2 tsp lemon juice
For the batter:
1 egg
2 Tbsp refined flour
2 Tbsp gram flour
2 tsp lemon juice
1/4 tsp salt
1/2 tsp red chilli powder
1/2 tsp garam masala
Oil to deep fry
Method
Marinate the chicken with ginger-garlic paste.
Moong Dal Pakori
Ingredients
1 cup soaked (for 3-4 hours) dhuli moong daal (husked green gram)
1 tsp salt or to taste
Hari mirch (green chillies), chopped fine to taste
1/4 cup methi (fenugreek) leaves, chopped fine
2 tsp adrak (ginger) chopped fine
Oil for deep-frying
Method
Grind the daal to a smooth consistency without using water.
Beat the daal till fluffy and mix in the rest of the ingredients.
Heat the oil and drop teaspoonfuls into the hot oil and fry, first lightly and then to a golden brown and serve.
Fruit Custard
Ingredients
4 egg yolks
3 Tbsp sugar
400 ml milk
100 ml cream
1/2 tsp vanilla essence
4 green cardamom cloves
1 Tbsp flour, to thicken
1 1/2 cups freshly cut fruits
Method
On a double boiler, whisk egg yolks and sugar.
In a pan, add milk, cream, vanilla essence and green cardamom.Mix them well and let them cool a bit.
Add egg mixture into the pan. Keep it in a slow fire and stir them slowly.
Spicy Kerala Roast Chicken
Ingredients
1 kg chicken
5 tsp coriander powder
3 tsp chilli powder
1/4 tsp turmeric powder
1 tsp pepper powder
Salt – as per taste
2 tsp garam masala
4 tsp ginger paste
4 tsp garlic paste
4 tomatoes
3 large onions
6 green chillies
3 Tbsp soya sauce
4 Tbsp oil
10 -13 curry leaves
Method
Clean the chicken and make a few slits in both sides.
Eggless Pineapple Pastry
Ingredients
For the cake:
2 cups flour
2 1/2 tsp baking powder
1/2 cup butter
1 1/2 cups sugar – powdered
1/2 water
3/4 cup yogurt
1 tsp vanilla essence
1/4 tsp salt
2×9 inch round or square cake tins
For layering:
1 cup pineapples – chopped fine
3 Tbsp pineapple juice/syrup
3 cups cream-chilled
1/4 cup sugar
Cherries and pineapple slices for garnish
Method
For the cake:
Sift the flour and baking powder and transfer into a mixing bowl.
Hyderabadi Dum Ka Murgh
Ingredients
1 chicken, whole cut-up
2 Tbsp cashew nuts
1 Tbsp chironji or buchanania lanzan
1 cup sour curd, well beaten
1 cup deep fried onion
2 tsp ginger paste
2 Tbsp garlic paste
1/2 tsp turmeric powder
1/2 tsp kashmiri red chilli powder
2-3 green chilli, chopped
1/2 cup mint leaves, chopped
1/2 cup fresh cilantro, chopped
1 Tbsp shahi jeera
4-5 green cardamom pods, crushed
2 cinnamon sticks
5-7 cloves, crushed
1 tsp cumin seeds
2 tsp coriander seeds
Prawn curry in a hurry
Ingredients
2 tbsp curry paste (we used Patak’s Origional Balti curry paste)
1 onion, finely sliced
200g large raw or cooked prawns, defrosted if frozen
400g can chopped tomatoes with garlic
large bunch coriander, leaves and stalks chopped
Method
Drizzle some oil from the curry paste jar into a wok or large frying pan, gently heat, then add the onion.
Sizzle over a low heat for 4 mins until the onion softens, then stir in the paste and cook for a few mins longer. Stir in the prawns and tomatoes, then bring to a simmer.
Allahabad ki Tehri (Vegetable Pulao)
Ingredients
100 ml mustard oil
2 sticks of cinnamon
2 bay leaves
4 brown cardamoms
8 green cardamoms
8-10 black peppercorns
8 cloves
2 onions, chopped
50 gm garlic, chopped
50 gm ginger, chopped
3-4 green chillies, chopped
2 Tbsp cumin seeds, ground
2 Tbsp coriander seeds, ground
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp asafoetida dissolved in water (heeng)
5 boiled potatoes, chopped
3 carrots, chopped
100 gm green beans, chopped
Chana Kulcha
Ingredients
1 kg chick peas
2 tsp baking soda
For the masala:
3 tsp salt
2 tsp mango powder
1 tsp red chilli powder
2 tsp black pepper powder
2 tsp cumin powder
2 tsp powdered clove
2 tsp dry ginger
2 tsp coriander powder
2 tsp carom powder
2 tsp powdered cinnamon
Method
Soak chick pea in water with baking soda and keep them overnight.
For best taste boil them in water on low flame for 6- 7 hours.
Pakistani beheaded in Saudi Arabia; 84 executions in 2015
Saudi Arabia on Sunday beheaded a Pakistani national convicted of drug trafficking, bringing to 84 the number of such executions in the kingdom in 2015.
The convict, identified as Iftikhar Ahmed Mohammed Anayat, was beheaded in the Red Sea city of Jeddah, the Saudi Interior Ministry said in a statement carried by the official Saudi Press Agency.
The man was found guilty of attempting to traffic heroin into the kingdom in balloons concealed in his stomach.
PM Modi’s foreign tours a national duty, not secretive: Venkaiah
Taking a dig at Congress Vice President Rahul Gandhi for criticising Prime Minister Narendra Modi over his foreign visits, Parliamentary Affairs Minister M Venkaiah Naidu on Sunday said Modi’s schedule is in public domain and not a secret.
Defending Modi against Congress’ barbs over his “frequent” foreign tours, Naidu said they were meant to attract investments for India and the PM is undertaking the visits as part of his national duty.
IS militants take full control of Iraq’s Ramadi
The Islamic State (IS) militant group has taken full control of the Iraqi city of Ramadi, the capital of Anbar province, after the security forces withdrew from their positions, a provincial security source said on Monday.
The source told Xinhua news agency that the military units stationed in the Eighth Brigade headquarters north of Ramadi pulled out fully towards the 160 kilometer area west of Ramadi and that the militants (Daash) took control of the headquarters.
Saif Ali Khan may be arrested in assault case
(Reuters) – Actor Saif Ali Khan has been accused of assaulting a fellow diner at the Taj Mahal Palace hotel in Mumbai and might be arrested, police said on Wednesday.
“Khan has been charged with assault and participating in assault, as there were two or three others involved,” an official in the Mumbai police press room said. “We are investigating.”
Khan, 41, was dining with girlfriend Kareena Kapoor and friends at the Taj Mahal Palace hotel on Tuesday night when he got into an argument with complainant Iqbal Sharma.
