Recipe: Chana Dal Halwa

The Indians love it, the Pakistanis adore it. Made of Bengal gram this halwa is a favourite of the subcontinent and is specially made during festivals and celebrations. Try out this easy to make Chana Dal Halwa recipe.

250 gms Chana dal
½ kg Milk
150 gms Ghee
250 gms Sugar
1/2 cup dried coconut chopped
1/4 cup almond blanched and chopped
1/4 cup Cashew nut chopped
1/4 cup Walnut chopped
1/4 cup Pistachio chopped

Procedure:

Wash the chana dal and soak in water for two hours and then boil.
Keep aside till it cools.
Make a fine paste.

Greek Chicken Pasta

Ingredients:

• 1 cup Pasta (uncooked)
• 1 tbsp Olive Oil
• 4 cloves Garlic (crushed)
• ½ cup Red Onion (chopped)
• 250 gms Chicken Breast
• 1 large Tomato (chopped)
• ½ cup Feta Cheese (crumbled)
• 3 tbsp fresh Parsley (chopped)
• 2 tbsp Lemon Juice
• 2 tsp dried Oregano
• Salt (to taste)
• Pepper (to taste)
• 2 Lemons (wedged, for garnishing)

Procedure:
• Pour water in a large pot and add some salt.
• Add pasta.

Potato and Egg salad

Try out this mouth-watering salad recipe.

Ingredients:
• 3 Tomatoes
• 4 Eggs
• 5-6 Potatoes
• ½ cup Parsley (chopped)
• 2 tbsp Olive Oil
• 5-6 Black Olives
• 1 Cucumber
• 1 Onion
• Pepper (to taste)
• Salt (to taste)
• 1 tsp Vinegar

Procedure:

• Wash the potatoes well and boil them.
• Boil the eggs and set aside.
• Cool the eggs and peel them. Dice them thereafter.
• Rinse the boiled potatoes, peel and chop them into cubes.
• Place the potato cubes in a large mixing bowl.
• Add the chopped eggs and mix well.

Mango Lassi

Beat the summer heat by trying out this delightful recipe.

Ingredients:

• 2 Mangoes
• 2 tbsp Sugar
• 1 cup Yogurt
• 2-3 strands Saffron (kesar)
• A pinch of Green Cardamom Powder

Procedure:

• Wash the mangoes properly and then peel and remove seed.
• Grind into a mixer to make a paste out of it and transfer it into a bowl.
• Take yogurt, sugar and ice cubes and blend it properly in the same mixer for a minute.
• Add the mango paste and blend again for half a minut.

Lahori seekh kebab

Ingredients:
200g – mutton mince
10g – Deggi mirch
5g – chopped ginger
5g – chopped green chilli
Salt to taste
10g – Punjabi masala
5g – jeera powder
3g – coarsely ground coriander
15g – butter

Second masala:
50g – grated cottage cheese
5g – red chilli whole
3g – pepper corn
5g – coriander whole
3g – jeera whole
3g – chopped coriander

Rub the mutton mince nicely.
Add Deggi mirch, chopped ginger, chopped green chilli, salt, Punjabi masala, Jeera powder, coarsely ground coriander and butter.
Mix nicely.

Fried Meat Balls

Ingredients:
½ kg mince meat
1 tsp red chilli powder
½ tsp haldi powder
½ tsp coriander powder
1 tsp garam masala
1 cup fried channa
2 bunches coriander leaves
¼ coconut
Salt to taste
Oil for frying

Method:
Grind the red chilli powder, haldi powder, coriander leaves, coriander powder, garam masala, coconut and the fried channa in a mixer to make a fine paste.
To this mixture add the meat and mix it well.
On medium heat, add the meatballs in a non stick pan with some water.
Coook till all the water dries up.

Pista Choco Roll

Ingredients :
For the Pista Choco Roll
¼ cup powder sugar
1 tsp cocoa powder
2 tbsp chopped pistachios
2 drops rose essence

For the Khoya (mava) :
¼ cup powdered sugar

Method:
For the Khoya (mava) :
Heat the milk in a non-stick pan on a high flame till it comes to boil.
Continue to boil and keep on stirring continuously till it becomes semi-solid.
Keep it to cool.

For the Pista Choco Roll :
Combine the khoya and powdered sugar in a heavy bottomed pan and cook on a slow flame.

Fish Pulav

Ingredients :
4 cups Basmati rice
1 tbsp garlic-ginger paste
1 1/2 cup fish pieces
3 red dry chillies, ground
1/4 tsp turmeric powder
1 lemon
2 medium onions
15 peppercorns
6 cloves
2 1-inch sticks cinnamon
8 white cardamoms, crushed
1 1/2 tsp cumin seeds powder
2 bay leaves
salt to taste
ghee and oil as required

Method :
Wash the rice clean and put in a colander to drain out the water.
Remove the black threads running at the back of the fishs and wash these fish pieces with water.
Smear with a little salt and lemon juice.
Keep aside for 1/2 an hour.

Zaafrani Murg

Ingredients :
750gms chicken
salt to taste
2 tsp garlic paste
2 tbsp yoghurt
1 tsp red chilli paste
saffron a pinch
5-6 tbsp cashew nut paste
4-5 tbsp oil
2-3 bay leaves
4-5 cloves
2 tbsp onion paste

Method :
Take chicken pieces in a bowl. Add salt, garlic paste & yoghurt.
Also add red chilli and cashew nut paste and saffron dissolved in water.
Mix all the ingredients.
Heat oil in a pan. Add bay leaves, cloves & onion paste.
Add garlic paste once the onion becomes brown.
Now add already marinated chicken pieces and cook.

Crunchy Chicken

Ingredients:
4 chicken breast fillets
butter, salt and pepper
1 onion
1 clove garlic
2-3 tbsp vegetable fat for frying
3 tbsp peanut butter
400ml Coca-Cola
4 tbsp lime juice or lemon juice
50g chopped peanuts
2 tbsp fresh parsley

Method:
Rinse chicken fillets under cold water and pat dry with paper towel.
Heat butter in skillet and sear chicken breasts on both sides over high heat.
Reduce heat and cook for a further 10 to 15 minutes and then season.
Chop onions finely, press garlic and fry the two ingredients over high heat at the same time in a second skillet.

Badam Pista Milk

Try out this healthy, easy to make drink.

Ingredients:

¼ cup almonds soaked over night
¼ cup blanched and peeled
2 tbsp sugar
3 cups full cream milk
2 tbsp green cardamom powder/1 tbps rose essence
Crushed ice

Procedure:

Blanch the almonds and grind them along with pistachios to a fine paste. Now bring the milk to a boil and add the nut powder and cook till the quantity is reduced to half. Add essence/ cardamom powder and remove from stove. Transfer to the refrigerator and let it cool further. Now pour in a tall glass and serve with crushed ice.

Spicy Fruit Salad

Make your breakfast healthy by including this interesting salad.

Ingredients:

½ cup cubed Apples
½ cup cubed Papaya
½ cup sliced Grapes
½ cup cubed Cucumber
½ cup shredded Lettuce
2 tbsp Lemon juice
1 tsp Red chilli flakes
Rock Salt to taste
1 tbsp Brown sugar
1 tsp Pepper powder
4 tsp Olive oil

Procedure:

Prepare dressing by mixing lemon juice, red chilli flakes, salt, crushed black pepper, brown sugar and olive oil. Place all the fruits and vegetables along with lettuce leaves in a bowl. Pour the dressing over and toss. Serve.

Mughlai Rose Sherbet

This is a rich, cool and refreshing drink, a gift of the Mughlai tradition.

Ingredients:

• 3 tbsp Rose Syrup
• 3 cups Full Cream Milk
• 2 Malai Burfi
• 1/2 cup Sugar
• A few strands of Saffron (Kesar)
• 1/2 tsp Green Cardamom Powder
• 10 Almonds (blanched and peeled)
• 10 Pistachios (blanched and peeled)

Procedure:

• In a pan, heat the milk and bring it to a boil. Add sugar and heat till the sugar dissolves. Set aside.
• Add saffron to the milk and dissolve well.
• Add green cardamom powder to the milk and mix well and set aside to cool.

Mango Pickle

Ingredients :

1 large mango
½ cup red chilli powder
¼ tsp haldi powder
½ tsp methi seeds
¼ tsp mustard
¼ tsp hing
¼ cup salt
¼ cup cooking oil

Method :
Slice mango into small dices, removing the pitt, put salt and haldi.
Keep it aside for 4 to 5 days. Put red chilli powder to this mango and mix it properly.
Roast methi seeds and dry grind it and keep it aside. Heat oil in a pan, and put mustard, and hing and let it cool.
When the above oil becomes room temperature, mix it with the mango, and put the roasted methi powder.

Sabz Murg

Ingredients :
250 gm chicken pieces.
250 gm curd
125 gm green coriander, paste
1 tsp green Chilli, paste
1 tbsp almonds & Cashew, grounded
4 tsp oil
2 tbsp onion & garlic paste
salt to taste
jayphal a pinch

Method :
Marinate the chicken pieces with curd, green coriander and green chilli paste, grounded cashew and almonds.
Heat oil in a pan. Fry the onion and garlic paste till it is golden brown.
Then add the chicken pieces and fry and then add the marinate and cook further.
Add salt to taste and a pinch of jayphal.
Sabz Murg is ready.

Banana Twisters

Try out this easy to make, delightful snack.

Ingredients:

• 2 cups Maida (Flour)
• ½ cup Mashed Banana(ripe)
• 3 tbsp of Ghee
• 1-2 tbsp of Milk

Procedure:
• Add the banana pulp with the maida, milk and add just little water to knead into a dough.

• Divide dough into 5 portions.
• Roll each portion into a thick chapatti with a rolling pin.

• Now lavishly spread ghee on the chapatti and cut into half inch broad long strip.
• Carefully pick up each strip and twist gently.

Watermelon Sherbet

Try out this refreshing and healthy drink this summer

1 cup chopped ripe watermelon
2 tbsp sugar
1 cup chilled milk
2 tbsp fresh cream (optional)
1 tbsp rosewater/essence
½ cup crushed ice

Procedure:

Carefully remove the seeds of the watermelon and run in a grinder to a smooth paste. Now add sugar, rosewater, cream, and milk and run for a few minutes in a blender. Pour in tall glasses. Top with crushed ice and serve immediately.

1 tsp saunf seeds

2 whole red chillies
2 tsp rock salt
