Recipe: Bhang Lassi

The occasion of Holi is incomplete without Bhang Lassi!

Ingredients:

Cannabis (Bhang), 1/2 ounce
Warm whole milk, 2 cups
Sugar, 1/2 cup
Coconut milk, 1 tablespoon
Chopped almonds, 1 tablespoon
Powdered ginger, 1/8 teaspoon
Garam masala, a pinch
Grenadine, 1/2 teaspoon
Water, 1 cup

Procedure:

Bring water to a boil in a teapot.
Add cannabis to the water.
Brew for about 8 to 10 minutes. Strain the mixture.
Gradually grind the strained cannabis along with 2 tablespoon of milk. Repeat the process several times.
Strain the milk into another bowl. Keep it aside.

Recipe: Feta and Tomato Salad

A favourite of the Greeks, try out this amazing recipe in your own kitchen.

Ingredients:

• 1 loaf of Bread
• 5 tbsp Olive Oil
• 2 Tomatoes
• Dried Oregano
• Pepper
• 250 gms Feta Cheese
• Salt (to taste)

Procedure:

• Take the bread loaf and cut into slices.
• Brush the slices with olive oil.
• Place the feta cheese in a mixing bowl and crumble.
• Add olive oil, oregano, pepper and salt. Mix the ingredients well.
• Chop the tomatoes to small cubes.
• Add the cubed tomatoes to the feta cheese mixture. Mix softly.

Ingredients

250 gms Besan (gram flour)
200 gms Potatoes
200 gms Cauliflower
150 gms Onions
100 gms Spinach
200 gms Brinjal
10 gms Bhang seed powder
2 gms Soda-bicarb
5 gms Ajwain
5 gms Pomegranate seed powder
Salt to taste
Oil for deep-frying

Instructions

Wash and peel all the vegetables.
Sieve besan, soda-bicarb and salt together.
Add bhang seed powder, ajwain, red chili powder, and pomegranate seed powder.
Add water according to requirement and make thick batter.
Heat oil in a deep-frying pan.

2 cups yoghurt
2 tbsp singhare ka atta
4 cups water
1 tbsp rock salt

1 sprig curry leaf
3-4 whole red chillies
2 tbsp coriander leaves-chopped

Gujarati: Masala Poori

Ingredients :

1 cup – Wheat flour
2 tsp – Oil + Frying
Salt to taste
1/4 tsp – Ajwain
1 pinch – Asafoetida
1/2 tsp – Red chilli powder
Procedure :

Sieve the wheat flour and salt.
Mix all the ingredients and knead to firm dough adding enough water.
Cover and keep the aside for half an hour.
Take small lumps of dough and roll into small puris.
Heat oil in a kadhai
Deep fry the puris.
Serve hot.

Recipe: Potato Omelet

Ingredients

5 eggs

1 teaspoon of sugar

1/4 teaspoon of salt

1/4 teaspoon of pepper

1/2 cup of milk (125ml)

1-2 tablespoons of butter or margarine (optional)

Filling:

1 potato, chopped into 1/4″ – 1/2″ cubes (approximately 1cm)

1 small onion, minced or chopped

1/2 cup cheese (50g), shredded

Procedure

In a bowl beat together eggs, sugar, salt and pepper.

Mix in milk.

Heat up two frying pans to a medium temperature.

Use butter, margarine, or cooking spray on each pan.

Add chopped potatoes to one pan.

3 pounds small white potatoes (use waxy or red potatoes)

Shortcrust pastry is buttery, crumbly and a tasty treat.

Ingredients

150g (1/2 cup) unsalted butter, softened

100g (1/2 cup) caster sugar

1 tsp grated lemon rind

120 g (1 cup) plain flour, plus extra for dusting

120 g (3/4 cup) potato flour

Procedure

Cream together butter, sugar, and lemon rind in a bowl.

Sift together the plain and potato flours into a mound.

Make a well in the center of the mound and add the creamed mixture.

Knead lightly until the dough is consistent.

Wrap the dough in plastic wrap and chill for 1 hour before use.

• 750 gms Mutton
• 1 kg Chicken

2 tbsp Rice

Soak rice in water for a few hours, then drain the water and grind rice into a smooth paste.

In a non-stick saucepan, boil milk. After it comes to a boil, reduce the heat to simmer.

• 250 g Keema
• 250 g Maida
• 150 g Chana Dal
• 2 tsp Garlic Paste
• 2 tsp Red Chilly Powder

• 2 tsp Lemon Juice
• 1 tsp Pepper Powder
• 3 Eggs (white portion)

Procedure:

• Boil the keema and chana dal in some water and let it cool.
• With hands, mix all the ingredients except maida and egg whites.
• Keep aside the mixture.
• Next, make a soft dough using maida and egg whites.

MAKKI PANEER PAKORA RECIPE

Ingredients:

1/2 tsp cumin powder
2 tblsp coriander leaves chopped
oil for deep frying
6 tblsp bengal gram flour besan
salt to taste
2 tsp ginger chopped
2 tsp garlic chopped
2 green chilli chopped
1 cup milk
1 3/4 tsp dry mango powder amchur
1 onion chopped
100 gms cottage cheese (paneer)
200 gm corn fresh (makki)

How to make makki paneer pakora :

Crush the corn in a blender.
Grate the cottage cheese.
Heat up oil in a pan, mix in cut ginger and garlic and stir fry till pink.
Mix in crushed corn and stir fry.
Mix in salt and mix.

METHI PULAO RECIPE

Ingredients:

11/2 Cup Long Grain (Basmati) Rice
1 cup green peas
50gms paneer (cut into small cubes and deep fried)
A small bunch of methi (fenugreek) leaves (chopped)
2 tomatoes (chopped)
4-5 flakes of garlic (paste)
2-3 green chilies (chopped)
1/4th tsp. turmeric powder
Red chili powder to taste
Salt to taste
1tbsp oil/butter

How to make methi pulao:

Wash methi properly and drain the water and keep aside.
Heat oil in the pan and add garlic paste and fry till light brown.
