Recipe: Chocolate Bread

Ingredients

• 8 Ounces chocolate chips
• 2 pkg Dry yeast
• 1 1/2 Cups flour
• 2 tbsp Honey
• 3 tbsp Butter
• 1 Egg
• 1 Cup water warm
• 1 Cup water lukewarm
• 4 Cups flour

How to make

Beat the mixture of yeast flour, water and honey in medium bowl and cover with a plastic sheet.

Let it stand for 1 hour.

Stir sponge and blend in milk-butter-salt mixture.

Now, add in the flour to prepare soft dough. Knead it into a non-stick dough .

Put dough, turning to coat entire surface in a greased bowl.

Banana Jam

Ingredients:

2 kg ripe Bananas (chopped)
4 tbsp Lemon Juice
3 cups Sugar
1 Clove
Cochineal Red Color (as desired)

How to make Banana Jam:

Put banana pieces in a large saucepan and add sufficient water. Cook on medium flame until the chopped bananas get tender. Take the saucepan off the flame.
Strain the cooked banana through a cloth, reserving the liquid.
Mix the liquid with sugar, lemon juice, and clove in the same pan. Allow it to simmer while also stirring continuously on medium flame until thickened. Remove the foam forming on the surface.

Mla Dosa

Ingredients
•Whole green grams (sabut moong),soaked 1 cup
•kolam rice,soaked 2 tablespoons
•Green chillies,broken 2-3
•Curry leaves 7-8
•Ginger,chopped 1 inch piece
•Salt to taste
For Upma
•Semolina (rawa/suji) 3/4 cup
•Oil 2 tablespoons
•Mustard seeds 1/4 teaspoon
•Curry leaves 7-8
•Split black gram skinless (dhuli urad dal) 1 tablespoon
•Asafoetida 1/4 teaspoon
•Cumin seeds 1/4
Method
Grind moong and rice with little water. Add green chillies, curry leaves and ginger and grind to a coarse paste.

Til Aur Kadi Patta Rice

Ingredients
•Cooked rice 3 cups
•White sesame seeds,roasted 2 tablespoons
•black sesame seeds (kale til),roasted 2 tablespoons
•Curry leaves 1/2 cup
•Onions 2 medium
•Oil 2 tablespoons

Recipe: Crispy Bhindi

Ingredients

• 250 g Ladyfingers (chopped)
• 1 Onion (chopped)
• 1 stalk of Curry Leaves
• 3 tbsp grated Coconut
• ½ tbsp Coriander (chopped)
• ½ tsp grated Ginger
• 1 tbsp broken Cashew Nuts
• 5 whole Red Chilies
• 1 tsp Cumin Seeds
• 1 tsp Mustard Seeds
• 1 tsp Urad Dal
• ¾ cup Curd (beaten)
• ¼ Red Chili (crushed)
• ¼ tsp Turmeric Powder
• Salt (to taste)
• 2 tbsp Oil

How to make

Grind coconut and cashews together.

Heat oil in a pan and deep fry ladyfingers until crusty. Drain and keep aside.

Recipe: Oreo Cheesecake

Ingredients

For Crust

• 1¼ cup Oreo Cookie (crumbled)
• 4 tbsp Butter (melted)

For Filling

• 1 cup Whipping Cream
• 240 gm Philadelphia Cream Cheese (softened)
• ¾ cup Caster Sugar
• 24 Oreo Cookies (coarsely chopped)
• 12 mini Oreo Cookies

How to make

Mix cookie crumbs with butter in a bowl and spread it pressing into a pie pan. Refrigerate it for a while.

Take cream in a bowl and beat until it forms into firm peaks. Freeze it for a while.

Beat cream cheese in a fresh bowl until it is smooth.

Methi Matar Malai

Ingredients
Green Peas – 1 cup
Fenugreek leaves (Methi) – 1 bunch
Cream – 1/2 cup
Tomato – 1 (pureed)
Cumin seeds – 1/2 tsp
Turmeric powder – a pinch
Chilly powder – 1/2 tsp (optional)
Milk – if needed for gravy
Butter – 1 tblsp
Salt – to taste

To grind
Onion – 1
Green Chilly – 1
Cashew nuts/ Almonds – 1 tblsp
Poppy seeds(khus khus) – 1 tblsp (optional)
Curd – 1 tblsp
Ginger – 1/2 ” piece
Cinnamon – 1/2 ” stick
Cloves – 3
Cardomon – 1

Method
1. Roast all the ingredients under “to grind” except curd. Make a paste of it with the curd and keep aside.

Potato Fry

Potato fry is a very very versatile recipe and there are n number of recipes for the same. You could just add salt and fry the potatoes. Some others like to add salt and chilly powder. Some more daring cooks try too add chicken masala, mutton masala, channa masala etc and make it more interesting. You can also add other ingredients like onion, garlic, ginger, cumin seeds, carom seed (ajwain) etc. It all depends on each persons preferences and taste. Here is a basic recipe as a guideline. You can make changes as per your taste.

Walnut Biscuits

Ingredients
Maida (All Purpose Flour) – 1.5 cups
Rava – 1/2 cup
Sugar – 1 cup
Butter/ Ghee – 1 cup (at room temperature)
Baking Soda – 1/2 tsp
Baking Powder – 1 tsp
Chopped Walnuts – 1/4 cup + 1/4 cup

Method
1. Cream the butter and sugar together with a wodden stick or with an electric blender.
2. In a seperate bowl, mix together the maida, rava, 1/4 cup of chopped walnuts and baking soda.
3. Mix this with the creamed butter sugar mixture. Knead everything together to form a soft dough.

Recipe: Besan Burfi

Try out this mouth-watering burfi recipe.

Ingredients:

1 Cup Bengal Gram Flour
1 Cup Sugar (powder)
½ cup Ghee
1/2 tsp Cardamom powder

Procedure:

Take a non stick fry pan and put it on low heat.
Cook the gram flour on low flame till it becomes aromatic.
Make sure the colour of the besan does not change. Add the sugar and mix well..
Remove from fire. Mix the cardamom powder.
Take a tray and smear some oil on the bottom and sides.
Spread this mixture on this tray.
When the mixture is set cut into small squares or diamonds.

Pan Fried Chicken

Ingredients
Chicken breast – 1 (slice it horizontally)
Crushed pepper – As per taste
Lime juice – 2 tsp
Salt- as per taste
Oil -To fry

Method
1. Cut the breast horizontally. Now put it in a ziplock bag and tap well with a hammer.
2. Now add pepper salt and lemon juice.Keep it for 1/2 hr in the refrigerator.
3. Now pan fry it.(better to use non stick dosa or chappatti pan).
4. You can use this to make sandwiches, pasta, wraps, pizzas, noodles, fried rice or roll it inside chappati and have it.

Variations
– Add 1 tblsp of soy sauce for a chinese flavour.

Thai Red Curry

Ingredients
Red Curry Paste – 4 tblsp (Use green curry paste to make Thai Green Curry)
Coconut Milk – 3 cups
Boneless Skinless Chicken Breast – 2 (cut into bite size pieces)
Palm Sugar – 1 tblsp (optional)
Fish Sauce – 2 tblsp
Onion – 1 (sliced)
Vegetables of your choice – about 2 cups
(Some of the vegetable options are brinjals, bell pepper, mushroom, green beans, snap peas, bamboo shoots, tofu, water chestnuts, baby corn, carrots, cauliflower etc. Use 2-3 vegetables of your choice.)
Lime Leaves – 2-3
Sweet Thai Basil Leaves – 4 or 5 leaves
Oil – 1 tblsp

Ginger – 1/4 cup (minced or crushed)

Red chilly powder – 4-5 tblsp (skip or add as per your taste)

Vinegar – 1/2 cup
Mustard Seeds – 1 tsp
Salt – 5 tsp (or to taste)
Sesame oil – as needed for deep frying

Method

Slow Cooker Pot Roast

Ingredients
Condensed cream of mushroom soup – 1 can (10 ounce)
Dry onion soup mix – 1/2 pack (1 ounce)
Water – 1/2 cup (120 ml)
Beef chunk – 2.5 lbs (1.25 kg)

Method
1. Mix cream of mushroom soup and dry onion soup with water.
2. Pour the mixture into the slow cooker.
3. Place the beef chunk in the slow cooker.
4. Coat the beef chunk with the soup mixture.
5. Cook on high setting for 3 to 4 hours or on low for 6 to 7 hours.

Fruit Cake

Fruit cake is a rich dense cake packed with dry fruits and nuts flavoured with spices usually made during christmas. It is made in different parts of the world with slight variations. In India, this is found everywhere during christmas season, although it is also available commonly throughout the year.

Hakka Noodles Sandwich

Hakka noodles is liked by all the children. I never eat noodles as i was never fond of it. Once my daughter forced me to eat. After i tasted one teaspoonful of the same, I liked it.

Ingredients
1 Hakka noodles packet.
1 Capsicum finely chopped
Spring onion finely chopped
1 Carrot finely chopped lengthwise
1 tbs Cabbage
1 tbsp Beans chopped lengthwise
Soya sauce, chilli sauce as per your requirement.

Spring onion for garnishing.

Method
1. Boil water, add the hakka noodles, teaspoonful of oil, and cook the same.

Waffle

Ingredients
All Purpose Flour (Maida) – 1 cup
Whole Wheat Flour (Atta) – 1 cup
Baking (Cooking) Soda – 1/2 tsp
Baking Powder – 1 tsp
Salt – 1 tsp
Sugar – 3 tblsp
Melted Butter/Oil – 1/2 cup
Milk – 1.5 cup
Vanilla Essence – 1 tsp
Eggs – 3

Method
1. In a large bowl, combine all the dry ingredients together – all purpose flour, whole wheat flour, baking soda, baking powder and sugar. Set it aside.
2. In another small bowl, whisk together all the wet ingredients – milk, eggs, melted butter (or oil) and vanilla extract. Mix till it is well blended.

Paneer Makhani

Ingredients
Paneer – 1/2 lb (250 gms)
Onion – 1 big/2 small (chopped)
Ginger Garlic Paste – 1 tblsp
Tomato – 3 small/ 2 big (blanched and pureed)
Cashew Paste – 2 tblsp
Chilly Powder – 2 tsp (or to taste)
Corriander Powder – 1 tsp
Garam Masala Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Kasoori Methi (dry) – 1 tsp
Cumin Seeds (Shahi Jeera) – 1/2 tsp
Butter – 2-3 tblsp
Oil – 1 tsp
Orage-red food colour – 1/4 tsp

Heavy Cream (Fresh Cream) – 1/4 cup
Cilantro – for garnish (finely chopped)

Method

Punjabi Kadhi

Ingredients
For pakoras
Besan(gram flour) – 1 cup
Onions -2(chopped)
Potato – 1(chopped)
chili powder – 1 tsp .
salt – to taste

For kadhi
Yoghurt – 1 cup
Besan(Gram flour) – 2 tbsp
Turmeric – 1 tsp
Methi dana(fenugreek seeds) – 1 tsp
Whole red chillies – 2 pieces
Salt – to taste

Method
1. Mix all pakora ingredients along with little water and make small pakoras of those and deep fry. Keep aside.
2. In a bowl mix yoghurt, besan, turmeric and salt and mix well. Make sure there are no lumps left behind. Add 3-4 cups of water to retain the consistency

Trifle

Trifle is a very simple and versatile dessert which can be made easily for a large crowd with whatever ingredients you have on hand. Chicken/Turkey Fried Rice

Fried rice is a rice recipe that originated in china but its indo chinese version has become one of the favorites all indians. Rice sauteed with veggies and soy sauce makes a wonderful delicacy. It can be had just by itself without any sidedish. The following is the recipe for chicken fried rice. The recipe can be modified to get turkey fried rice, mutton fried rice, pork fried rice, beef fried rice or even shrimp fried rice using the appropiate meat. The meatless versions are egg fried rice and vegetable fried rice.

Channa Pasta

Ingrdients
Channa Masala (Chole) – 2 cups
Pasta – 2 cups
Salt – as needed
Chilly Powder – 1/2 tsp
Cilantro – for garnish

Method
1. Cook and drain the pasta as per the package instructions. Any shape of pasta could be used. Different pastas have different cooking times.
2. Heat the channa masala gravy with little extra salt and chilly powder. This is to flavour the pasta. If you do not have leftover channa masala, you can make it from scratch.
3. Toss the cooked pasta with the gravy and mix it nicely.
4. Finally toss in the finely chopped cilantro and serve hot.

Beetroot Milkshake

Ingredients
Beetroot – 1 big (grated)
Milk – 300 ml
Sugar – 4 tsp
Cardamom Powder – a pinch
Whipped cream – (optional)
Ice cream (Optional)
Subja (Basil Seeds) – 1 tsp (soaked in water) *

Method
1. Cook the grated beetroot with 2 cups of water.
2. When it is tender, remove from gas and allow to cool.
3. Blend the same in a mixer/blender nicely.
4. Add the milk, sugar, cardomom powder, whip cream and blend again.
5. Serve chilled with or without ice cream by adding subja.

Spinach (chopped) – 2 cups
Cilantro – 2 tblsp (chopped)

Method
To make the topping
1. Heat the butter in a sauce pan on medium-low heat.
2. Add the maida to this and keep whisking till you get a nice aroma of cooked flour.

Lemon Cake

Ingredients
All Purpose Flour (Maida) – 1.5 cup
Butter – 1 stick
Egg – 2
Sugar – 1 cup
Vanilla Essence – 1/2 tsp
Lemon Juice – 3 tblsp
Lemon Zest – 1 tblsp
Milk – 3-4 tblsp
Baking Soda – 1 tsp
Baking Powder – 1.5 tsp
Salt – a pinch

Method
1. Preheat the oven to 350 degrees F (180 degrees C).
2. In the large mixing bowl beat the butter and sugar until it is smooth and creamy.
3. Add the eggs one at a time while continuously mixing the mixture.
4. Add vanilla extract, lemon juice and lemon zest and mix.
