Fish tikka Kebab

Ingredients:
1 kg Fish
1 large Onion, chopped
1 pod Garlic, peeled
8 Green Chillies, chopped
1 inch piece Ginger, chopped
1/2 tsp Garam Masala
2 tsp Coriander powder
3/4 cup Yogurt
100 gms Oil
Salt to taste
2 tsp Fish Masala
1 Onion, cut into rings
1 Lemon, cut into wedges

Ingredients for Fish Masala
1 tsp Black salt
1 tsp Ajwain seeds
1/2 tsp Peppercorns
1 tbsp Cumin seeds
1 tbsp Pomegranate seeds

To make Fish Masala
1. Pound or grind all the ingredients, sieve and store in an airtight bootle.

Method:
1. Wash and clean the fish and cut into 1 1/2 inch pieces.

Beef Roast

Ingredients:

Beef 1 kg (boneless rump pc)
Cloves 6-8 nos
Cinnamon 2″ pc
Dry Chillies 8-12 nos
Pepper corns ½ level
Tbspn Garlic Pods 8-12 nos slightly crushed
Curry Leaves Oil – 4-6 tbspns
For marinating the Meat Ginger / Garlic paste 1 ½ tbspn
Lime Juice or Vinegar 2-3 tbspns
Turmeric pwd 1 level tspn
Salt to taste For Garnish
Fried Onions – 3 big onions

Finely cut in circles and fried brown and crisp Fried Potato Wedges – 4-6 big – Potatoes par boiled, peeled and each potato cut in 4 lengthwise and fried to a golden brown and crisp.

Method:

Mutton samosas

Ingredients : – 250 grams minced mutton, 200 grams flour, 1 tomato, 1 onion, 1 inch ginger, 2 green chillies, 1 teaspoon turmeric powder, 1 teaspoon garam masala, ½ teaspoon red chilly powder, 1 teaspoon cumin seeds, ¾ cup oil, 1 tablespoon white butter and 2 teaspoons salt.

Preparation time : – 50 minutes Serves : – 2

Chicken paratha

Ingredients: – 1 cup boneless chicken, 1 egg, ¾ cooked chapattis, 1 tablespoon coriander leaves, 2 green chillies, 1 small capsicum, ½ cup finely chopped onions, 1 tomato, 1 teaspoon garam masala(hot spice mix), 1 teaspoon roasted cumin powder, ½ teaspoon red chilly paste, little bit coriander leaves, 2 tablespoons oil and salt to taste.

Murgh musaallam

Ingredients: – 500 grams whole chicken, ½ cup curd(yoghurt), 1 green chilly made into a paste, 1 tablespoon ginger garlic paste, 2 cloves, ½ inch cinnamon, 2 brown cardamoms peeled, 4 pepper corns, ½ teaspoon cumin seeds, ½ teaspoon turmeric powder, ½ teaspoon garam masala, ½ teaspoon red chilly powder, 5 almonds, 1 teaspoon coriander seeds, 1 big onion, ½ cup tomato puree, 1 tablespoon oil and salt to taste.

Preparation time : – 30 minutes Serves : – 2

Dood Peda

Ingredients :
1 litre milk
¾ cup sugar
4 cardamom pods
Ghee for greasing thali

Method :
Heat milk on medium flame and allow it to boil.
Then stir constantly till it becomes semi-solid or khova is formed.
Mix sugar. Lower the flame.
Continue stirring till the mixture thickens and leaves the sides of the vessel.
Drop a sample of the mixture on a plate, and press between finger and thumb, when cool.
If it does not stick, remove from flame. Add cardamom powder.
Mix well. Take small part on the palm and shape into round balls.

Shahi Puris

Ingredients :
For the dough :
2 teacups methi leaves,
finely chopped
2 teacups gehun ka atta or maida
¼ tsp baking powder
1 tbsp fresh curds
2 tbsp melted ghee

For the stuffing :
100 grams paneer, grated
3 to 4 green chillies, chopped
2 tbsp coriander, chopped
salt to taste

Other ingredients
Ghee for deep frying

Method :
For the dough :
Sprinkle salt over the methi leaves and keep aside. Squeeze out the water after 15 minutes.
Combine the methi, flour, baking powder, curds and melted ghee. Mix a little water to make a dough.

Recipe: Palak Paneer

Enjoy this simple Indian food recipe in your main course meal.

Ingredients:

• 1/2 kg Spinach
• 200 gm Paneer
• 1 Onion
• 1/4 tsp Black pepper powder
• 3/4 tsp Ginger-garlic paste
• 1/2 tsp Green chilli paste
• 3 tbsp Butter
• 2-3 Bay Leaves
• 1 tsp Cumin Seeds
• 1 tsp Garam Masala Powder
• Vegetable oil
• Salt to taste

Procedure:

Mix green chilli paste and ginger-garlic paste with spinach. Add little water.
Pressure-cook the above mixture for 10 minutes. Remove before the first whistle.

Recipe: Frooty Almond Halwa

Made with healthy fruits and nuts as ingredients, this is a delectable dessert, a must have during festivals.

Ingredients:

1 medium-size Ripe Papaya (chopped)
1 tbsp Cashews & Raisins
200 gms Condensed Milk
1/2 ltr Full Cream Milk
2 Bananas (chopped)
2 Apples (chopped)
100 gms Almonds
5 tbsp Sugar
3 tbsp Ghee

Procedure:

Soak the almonds in hot water for about 15 minutes. Blanche.

Grind almonds, chopped papayas and half of the milk to make a paste.

Boil remaining milk in a thick-bottomed pan. Add papaya and almond milk mixture to it. Simmer.

Recipe: Palak Paratha

Try these yummy-healthy spinach parathas as morning breakfast.

Ingredients:

• 1 cup Spinach
• 2 cups Whole Wheat Flour
• ¼ cup Coriander Leaves, chopped
• ¼ tsp Chili Powder
• 1 tsp Cumin Seeds, roasted
• 1 tsp Carom Seeds (Ajwain), roasted
• 1 Onion, chopped
• 2 Green Chilies
• Salt to taste
• Oil/butter (as required)

Procedure:

• Boil water in a pan and add palak. Simmer for 3 to 5 minutes. Strain out the water and allow the palak to cool.
• Grind the coriander leaves, palak and green chillies to make a fine paste.

Baked Potato Soup

This is an interesting soup made of bacon, shallots, baked potatoes and cheese.

Ingredients:

• 10 Bacon slices
• 2/3 Cup margarine
• 2/3 Cup all-purpose flour
• 6 Cups milk
• 4 Large baked potatoes, peeled and cubed
• 3 Green onions, chopped
• 1 1/4 Cups cheddar cheese, shredded
• 1 Cup sour cream
• 1 tsp Salt
• 1 tsp Ground black pepper

Procedure:

• Place bacon slices in a large, deep skillet. Cook over medium heat till brown.
• Drain, crumble and set aside.
• In a stock pot or Dutch oven, melt the margarine over medium heat.

Ingredients

1/2 kg chicken 2 inch cubes pieces (boneless)
1 tbs lemon juice
2 tbs flour
1/4 tsp baking powder
1 tsp ginger garlic paste
1/2 tsp black pepper powder
1/2 tsp red chilli powder
1 tsp or to taste salt
1 tbs corn flour
Bread crumbs as required
1 egg, beaten
Oil for frying

Aloo Bonda

Ingredients:

• 4 Potatoes
• 2 Cups besan
• 2 Green chilies
• 1/2 tsp Turmeric powder
• 1/2 tsp Red chilli powder
• 1/4 tsp Garam masala
• 2 Cups oil

How to make Aloo Bonda:

• Boil the potatoes and mash it properly.
• Add red chili powder, garam masala, chopped green chilies to mashed aloo.
• Make ball of mashed aloo mixture.
• Add water to besan and make a batter of medium consistency.
• Now add turmeric powder and salt to batter.
• Dip each ball in the batter.
• Fry it till it turns golden brown.

Fish Biryani

Ingredients:

• 2 Cups basmati rice
• 1 Cup tomato puree (preferably fresh)
• 1 Cup coconut milk
• 2 Cups of water
• 1 tsp Chili powder
• 1 tsp Garam masala(optional)
• 10-12 pieces of thorn less fish
• 1 Inch ginger
• 8 Flakes garlic
• 1 Cup yogurt
• 4-5 Green chilies
• 1 Bunch coriander leaves
• 1/2 tsp Turmeric
• 2 Onions sliced
• 2 tsp Oil
• Salt to taste

How to make Fish Biryani:
• For Marination:
• Grind ginger, garlic, green chilies, turmeric, and salt into a fine paste.

Haleem

Ingridients:

• 200 gm Wheat (washed and soaked for 2 hrs)
• 300 gm Boneless Mutton
• 100 gms Cooking oil
• 3 Onions (sliced)
• 2 Lime
• 2 tsp Garam Masala
• Salt to taste

For paste:
• 20 gm Fresh Green Chillies
• 2 inch piece Ginger
• 6-8 flakes Garlic

How to make Haleem:
• Clean and marinate mutton with half of ground paste of ginger, garlic, green chillies and salt for 1 hour.
• Pressure cook the soaked wheat and marinated meat for about 45 minutes.
• Mince and grind to a fine paste.

1 pack Vermicelli
1 gallon fresh whole milk
1 cup sugar
20 cloves whole cardamom pods
1/2-teaspoon cardamom powder
1 cup slivered almond, cashews and pistachios
1/2-cup fresh cream
1/2 teaspoon saffron strands
3 tablespoons charoli nuts
1/2-cup light brown raisins
1/2-teaspoon rose water
1-tablespoon butter

Procedure:

Chicken Pakora

500 gm Boneless Chicken Pieces
2 tbsp Oil
1 tsp Ground Cumin
1 1/2 tsp Salt
1-2 each Chopped Green Chillies (Jalapeno)
1 Chopped Onion
1 tsp Ginger-Garlic paste
2 tsp Vinegar
1 cup Curd
1 tsp Lemon juice

Preparation:

Put everything but chicken and batter in blender and blend till fine
Marinate the chicken pcs with the resulting mixture
Keep in the fridge for 40 minutes.
Put chicken in batter
Deep fry it until its colour changes to golden brown Condiments
Serve the chicken pakora with coriander or mint chutney or tomato ketchup

FRUIT CUSTARD PUDDING RECIPE

How to make fruit custard pudding:

* Cut cake in the centre into two halves.
* Prepare jelly according to the instructions.
* Beat cream until it thickens.
* Peel all the fruits and cut into small pieces.

Dahi Ke Kebab Recipe

This is an unusual recipe of dahi ke kebab.Here dahi or yougurt is mixed with cottage cheese and then made into tikkis.

Ingredients:

1.2 ltrs yoghurt
100 gms cottage cheese grated
40 gms chopped onion
30 gms chopped ginger
10 gms chopped fresh coriander
cornflour to dust
30 gms cashewnut powder
30 gms chopped raisins
4 gms white pepper powder
4 gms cardamom powder
salt to taste
oil to grill

How to make dahi kebab :

* Saute the onion and ginger in minimum oil till it sweats.
