Recipe: Corn and Potato Kebabs

Serve these yummy kebabs with tea today.

Ingredients

1 cup sweet corn, boiled
1 cup potato , boiled and grated
2 tbsp chopped coriander (dhania)
2 green chillies, finely chopped
1/4 tsp garam masala
2 tsp lemon juice
2 to 3 tbsp bread crumbs
salt to taste
Method

Combine all the ingredients in a bowl and mix well.
Divide the mixture into 4 equal portions.
Using a thick seekh (metal skewer), press each portion of the corn mixture on it using your fingers to make a 100 mm. (4″) long kebab.
Brush each kebab generously with a little oil.

• Olive oil 8 tablespoons
• Salt to taste
• Onion 1 medium
• Tomato 1 medium

Method

Mango Milkshake

Ingredients:

1 Ripe Mango
4 tsp Sugar
1 cup Milk
Essence, as per requirement

Preparation:

Boil the milk and allow it to cool down to room temperature.
Peel and cut the mango and crush in a mixer.
Pour the milk and sugar; grind once again.
Serve chill.

Salty Lassi

Ingredients:

• 100 ml water
• 3 tbsp natural set low fat yogurt
• 100 ml milk
• 1/2 tsp salt
• 1/2 tsp garam masala

Procedure:

Place the water, yoghurt, milk, salt and garam masala in a blender. Blend until well-mixed and serve at once over ice.

Chop onions and tomatoes.

Recipe: Nawabi Biryani

400 gms Basmati Rice
1/2 kg Mutton (cut in pieces)
3 Onions (sliced)
1/2 tbsp Ginger-Garlic Paste
1 tsp Garam Masala
3 small-sized Red Chilies
1 piece Cinnamon
1/2 cup Curd (beaten)
3 Green Cardamom
5 Pepper
5 Cloves
1/2 tsp Shahjeera
1/2 tsp Turmeric powder
1/4 cup Milk, with saffron
1 pinch Coriander/Pudina (chopped)
5 apricots
Dry Fruits
Ghee, as required

Procedure:

Fry the dry fruits & apricots in 2½ tbsp ghee, with a little salt (to taste).

Aam Ka Panna Recipe

Ingredients:
• 2 Raw Mangoes, large size
• 2 tsp Cumin Powder
• 1 tsp Peppercorns, crushed
• Black Salt, to taste
• ¼ tsp Asafoetida
• ¼ cup Sugar

How to make Aam Ka Panna:
• Wash the mangoes and boil them in the pressure cooker. Let them cool down.
• Now, peel the mangoes and then mash and strain the pulp in a bowl.
• Put cumin powder, crushed peppercorns, black salt, asafeotida and sugar in it and mix well, till sugar is dissolved.
• Divide the mixture into 4 glasses; fill them up with chilled water and stir.
• Serve.

Thandai

Beat the heat with this cool thirst-quencher!

Ingredients:

Milk, 1 litre
Sweetened condensed milk, 1 can
Almonds, blanched, about 30
Whole pumpkin/sunflower seeds (unsalted), 6 tablespoon
Cardamom powder, 1 1/2 teaspoon
Rose water (optional), 3 teaspoons
Crushed ice
Rose petals, to garnish

Procedure:

Grind all the almonds, sunflower/pumpkin seeds, cardamom powder and rose water till the mixture turns into a fine paste.
Add the condensed milk, milk and crushed ice to the paste. Blend everything well.
Strain the drink through a fine sieve or muslin.

Recipe: Lassi

Traditional salty (namkin) lassi

4 c (1 L) yogurt
3 c (750 mL) cold water
1 c (250 mL) crushed ice
fresh green chili peppers (quantity according to taste), chopped
1 tsp cumin, roasted and ground
3 tbs lime or lemon juice
2 tsp salt

Combine all ingredients except ice in blender and blend until smooth. Then add ice and continue blending until frothy.

Mild salty lassi

Here is one possible recipe for a Salty Lassi:

250 mL (1 cup) full-fat yogurt
250 mL (1 cup) chilled milk
1 teaspoon (4g) cumin seeds
2 teaspoons lime or lemon juice
½ – 1 teaspoon (2-4g) salt

Ingredients:
Almonds, 1 cup
Pistachios, 1 cup
Chilled/ warm milk, 3 cups
Sugar, to taste
Cardamom powder, 2/3 teaspoon
Kewra essence, 2 tablespoons (optional)
Rose water, 2 teaspoons

Procedure:
Grind the pistachios and almonds to a smooth paste. Add a little milk while grinding.
Add the milk, sugar, cardamom powder, kewra essence (if using) and rose water to the mixture.
Blend all the ingredients well. Refrigerate in a tall glass.
The delicious Badam Milk is ready to be served!

1 c Warm water (105 – 115 F)
2 Envelopes dry yeast
2 tb Honey

Dough:

1 c Lukewarm milk (95 F)
3 tb Butter, melted
4 To 5 cups all-purpose flour or bread flour
8 oz semisweet chocolate, coarsely chopped
1 Egg beaten with 2 Tbs whipping cream (glaze)
Sugar

Instructions

Makes 8 small loaves

For sponge: Whisk flour, water, yeast and honey in large bowl until smooth. cover with plastic. Let stand in warm draft-free area 1 hour.

Recipe: Masala Dosa

Ingredients for Dosa batter:

• 2 cups – Idli rice or parboiled rice
• 1/2 cup – Skinless split urad daal
• 1/2 teaspoon – Methi seeds (Fenugreek seeds)
• 1 tablespoon – Salt

Procedure:

Add parboiled rice and methi into one large vessel containing sufficient water for soaking. Then soak urad dal in water in a separate vessel. Soak for 6-7 hours or overnight.

Recipe for delicious Kashmiri Pulao

500 gms long grain rice
100 gms onion sliced vertically
5 gms cinnamon
5 gms cardamom

Procedure:

• Wash and soak rice.
• Heat oil and fry onions till golden brown and remove.

1/4c Flour
1/4c White raisin
