Ingredients

1 large carrot, cubed
2 potatoes, cubed
1 capsicum, chopped
1 cup cauliflower florets, chop
8-10 chopped French beans
1/4 cup green peas
2 onions, finely chopped
2 green chopped chilies
1 tsp ginger-garlic paste
1/4 tsp turmeric powder
1/2 tsp red chili powder
1 1/2 tbsp Pav Bhaji Masala
3/4 tsp sugar as per taste (optional)
Salt to taste
2 tomatoes, finely chopped
1 tbsp lemon juice
1 tbsp ghee
Fresh coriander leaves for garnish
1 1/2 tbsp oil

Tandoori chicken

Ingredients
– 1 cup non-fat plain yogurt
– 4 bone-in chicken thighs, skinned and trimmed of fat
– 1 small onion, minced
– 1 1/2 tablespoons lemon juice
– 2 cloves garlic, minced
– 1 tablespoon chopped cilantro
– 1/2 tablespoon ground turmeric
– 1/2 tablespoon ground cumin
– 1/2 tablespoon ground ginger
– 1/2 tablespoon salt, or to taste
– 1/4th tablespoon freshly ground pepper
– 1/4th tablespoon ground cinnamon
– Pinch of ground cloves

• 1 cup Channa Dhal( Kadala Parupu)
• 1 cup Green Gram Dhal (Pasi Paruppu)
• 1 cup Red Gram Dhal

• 4 Garlic

Method

Soak chana dal, green gram dal, red gram dal, raw rice and Idly rice all together for about 1 to 2 hours.

Almond Spice Sandwich is an instant recipe to satisfy your hunger.

Ingredients:

• 1/2 cup Almond Butter
• 1 tbsp Honey
• 1 tsp Cinnamon (Ground)
• 4 tbsp Almonds (Sliced)
• 4 tbsp Raisins
• 8 slices Whole Grain Bread

Method

• Mix almond butter, honey and cinnamon in a bowl.
• In a slice of bread, spread two tablespoons of almond butter mixture.
• Over it sprinkle one tablespoon of sliced almonds and one tablespoon of raisins.
• Top it with the other slice of bread.

Ingredients:

Chicken pieces, 1kg
Fenugreek seeds, 1 tsp
Mustard seeds, 1 tsp
Fennel seeds, 1 tsp
Cumin seeds, 1 tsp

Onion seeds, 1 tsp
Red dry chillies, 2
Onions sliced, 2 large
Garlic paste, 2 tsp

Procedure:
Heat the oil in a heavy-bottomed pan till and add the mustard, fennel, fenugreek, cumin, onion seeds, chillies and fry for a few seconds.

Recipe: Aloo Pakora

Ingredients:

• 6 Large potatoes
• 2 Cups besan
• 1 Cup water
• 4 Cups oil
• 2 tsp Red chilli powder
• 1 tsp Mango powder
• Salt to taste

Method

• Wash potatoes and cut it into thin slices.
• Add water to besan and make a batter of thick consistency.
• Add red chilli powder, mango powder.
• Blend it well.
• Heat the oil.
• Dip each piece of potato in batter.
• Fry these potato pieces one by one till they turn golden brown.
• Serve hot Aloo Pakora with tomato sauce.

Besan Cheela

Ingredients

2 cups Besan
1 large Onion, finely chopped
1 Green Chili, finely chopped
1 bunch Coriander Leaves, finely chopped
1 tsp Ajwain
1 tsp Black Pepper Powder
½ tsp Red Chili Powder
1 tsp Chat Masala
1 tsp Coriander Powder
1½ cup Water, to prepare batter
Oil, for cooking
Salt to taste
How to make Besan Cheela

Take a large bowl and put all the ingredients in it, except water. Mix all the ingredients well.
Now, add water in small quantities, to make a smooth batter. Make sure there are no lumps in the mixture.

Strawberry Ice-Cream

One of my favourite flavours of Ice-cream! To make this ice-cream, carefully select the sweeter strawberries. Choose the smaller variety as they are usually much sweeter than the larger ones. If the strawberries are sour, you may need to increase the quantity of sugar required. The variation of this ice-cream with bananas makes an amazingly different flavour. Bananas greatly improve the texture of this ice-cream.

How to make Fruit Custard

Ingredients needed

Vanilla flavored Custard powder – 2 tbsp
Milk -500 ml/ 2 1/2 cups
Sugar -50 grams or as required
Mixed fruits- anything of your choice

Coconut Barfi

Ingredients

Coconut – 1 or 2 cups of scraped coconut shreds
Water – 2 cups
Milk – 2 tablespoon
Sugar – 1-1/2 cups
Cardamoms – 6, finely powdered
Ghee – 3 tablespoons, melted

How to make

Heat a pan, add the coconut shreds and fry gently over low flame.
When the coconut milk moisture is somewhat reduced, remove it from flame.
Now in a separate vessel, boil water over moderate heat.
When the water starts boiling, add sugar and keep on stirring till the mixture boils.
Add milk to the boiling sugar syrup.

Strawberry Lemonade

Here is a refreshingly cool drink to beat the heat.

Ingredients

•Strawberry – 5 nos
•Lemon – 1
•Sugar – to taste
•Water – 1/4 cup
•Club soda – 500 ml
•Ice Cubes – as needed

Method

Powder the sugar in a mixie jar. To this add strawberry and grind well to a soft pulp. Transfer this to a bowl. Squeeze lemon juice to this mixture, add water and mix well.

Take a glass and place 2-3 ice cubes and fill 1/4th with the strawberry lemon mixture. Top with club soda and enjoy.

It is easy to make and can be served as a snack at tea time.

2 tbsp – corn flour
1 tbsp – rice flour
1 tsp – chilli powder
Salt to taste
Oil for frying
1 – tomato
1 – onion
Coriander leaves
2 tsp – lemon juice
1 tsp – chaat masala

Instructions

Remove the cobs from water and shred the corn kernels and collect them on a flat plate.

Mix corn flour, rice flour, chilly powder and some salt together and sprinkle this mixture on the shredded corn kernels.

Recipe: Roasted chicken with lemongrass butter

A hassle-free route to tasty roasted chicken.

Ingredients

50 g butter, softened
1 tbsp pureed lemongrass
15 g thyme, leaves only
1 x 1.5kg whole chicken
1 bulbs garlic, cut in half
1 tbsp olive oil

Method

Preheat oven to 180C/160C.

Mix the butter in a small bowl with the lemongrass paste and half the thyme. Season with salt and freshly ground black pepper.

Ease your hand under the skin of the chicken at the neck opening and smear the herb butter under the skin. Place the garlic inside the cavity. Rub all over with the oil, season and place in a roasting tray.

Recipe: Mixed Fruit Chaat

Ingredients:
Papaya (peeled and cubed), 1/4 cup
Watermelon (seeded and cubed), 1/8 cup
Mango (peeled and cubed), 1 small
Orange (peeled and sectioned), 1 small
Banana (peeled and cubed), 1
Pineapple (peeled and cubed), 1/4 cup
Lemon Juice, 2 teaspoon
Honey, 1 tablespoon
Lemon Rind, 1/2 teaspoon
Plain Yoghurt, 1 cup
Sugar, to taste
Chaat masala, to taste

Procedure:
Blend the yoghurt and honey smoothly. Refrigerate it for about 15 minutes.
Meanwhile, mix all the fruits. Add the lemon juice, lemon rind and sugar to the mixture.

Recipe: Mooli Paratha

Treat your taste buds with some garma garam mooli ka parathas.

Ingredients:

400 g – wheat flour
4 – big mooli (radish)
10 to 12 tbsp – ghee
sufficient water to make dough
2 tbsp – finely chopped coriander leaves
2 to 3 – green chillies
1 1/2tsp – cumin seeds
2 tsp – chillie powder
salt to taste

Procedure:

Make a semi soft dough by mixing wheat flour, some salt and sufficient water.
Cover and keep aside for 20-30 minutes.
Grate the mooli. Smear salt to taste.
Keep aside for about 20 minutes.
Squeeze out the water completely.

Recipe: Matar Pulao

This rice recipe is easy to make and goes well with curry or dal.

Ingredients

2 tablespoons vegetable oil
4 whole cloves
3 black cardamom seeds
6 whole black peppercorns
2 (3 inch) cinnamon sticks
2 teaspoons garlic powder
2 tablespoons water
1 cup frozen green peas, thawed
2 cups uncooked basmati rice, rinsed and drained
4 cups water

1/2 cup bread crumbs
1/3 cup Parmesan cheese
2 tbsp fresh parsley
1/4 tsp garlic salt
1/4 tsp pepper
6 chicken breasts, skinless
1/4 cup Italian salad dressing

Procedure

Mix crumbs, cheese and seasonings in a ziploc bag. Dip chicken in Italian dressing. Coat with bread crumb mixture. Bake in 350 degree oven for 45 minutes.

I lb chicken breast cut in halves
3 tsp taco seasoning
2 tsp vegetable oil
1 11 gms jar chunky salsa
1/2 cup peach preserves

Place the chicken in a large re-sealable plastic bag.

Add taco seasoning and toss to coat.

In a skillet, brown chicken in oil.

Combine salsa and preserves; stir into skillet. Bring to a boil.

Reduce heat; cover and simmer for 2-3 minutes or until meat juices run clear. Serve over rice.

Recipe: Apple and Walnut Salad

• 2 cups Apple (red, diced)
• 1/3 cup Walnuts (chopped)
• 1 cup Celery (diced)
• 2 tbsp Mayonnaise dressing

• Mix apple, celery, walnuts, honey, mayonnaise and lemon juice.

Ingredients:

Full cream/ whole milk, 1 litre
Sweetened condensed milk, 1 can (400gm)
Powdered milk, 1 cup
Sugar, 1 cup
Cardamom powder, 1 teaspoon
Unsalted roasted almonds/pistachios cut into slivers (optional), 1/2 cup

Procedure:

Place all the ingredients in a deep, heavy-bottomed (preferably non-stick) pan. Blend the ingredients with a plastic whisk (to avoid scratching the pan).
Cook on a medium flame till the consistency of the milk mixture is thick.

Recipe: Mango Punch

Ingredients:
Alphonsa Sweetened Mango Pulp, 1 can
Sprite, 2 litres
Ginger Ale, 2 litres
Vanilla Ice Cream, 2 scoops
Orange, 1

Procedure:
Pour the mango pulp into a punch bowl.
Pour equal amounts of ginger ale and sprite and continue till the bowl is full.
Slowly add the ice cream to the bowl.
Cut the orange in parallels and add on the punch.
Leave the orange for about two minutes. Refrigerate for a while.
The Mango Punch is ready to be served!

Watermelon Salad

Try out this refreshing watermelon salad.

Ingredients:

2 small watermelons
1 cup can canned dice pineapple in juice, drain juice and reserve
11/2 cup seedless grapes
2 apples – peeled, cored and chopped
3 bananas cut into bite-size pieces
Procedure:

Slice each watermelon in half lengthwise.
Hollow out the insides using a melon bailer.
Reserve rind for later use.
Drain pineapple, and discard juice.
Slice apples in half, remove cores.
Cut into bite size pieces.
Peel banana, and cut into bite size pieces.
Rinse grapes under cold running water, and pat dry.

Recipe: Saffron Chicken

Saffron chicken is an easy recipe that makes for a great family meal.

Ingredients

2 lbs. boneless, skinless chicken breasts
1 lg. onion, cut lengthwise
1 ½ tablespoons olive oil
½ teaspoon saffron
3/4 cup chicken stock
½ teaspoon salt
Water

Instructions

Wash and trim chicken breasts and cut into 1 inch chunks. On the stovetop, add olive oil to a large pan and brown chicken on medium heat. Add onions and lower temperature to low-medium. Cook until onions are golden brown (about 3 minutes), stirring frequently.

Recipe: Honey and Fruit Smoothie

With this quick and nutritious drink, stay refreshed all day!

Ingredients:
Honey, 5 tablespoons
Ripe mangoes (Peeled and Chopped), 2
Ripe Bananas (Peeled and Chopped), 2
Ice cubes (Crushed), 8 to 10
Yoghurt, 2 cups
Lemon Juice, 2 tablespoon
Fresh Mint Leaves, to garnish

Procedure:
Refrigerate the mango and banana slices for about an hour.
Once the fruits are frozen, place the fruits, yoghurt and honey in a blender.
Blend everything until the consistency is smooth.
To the mixture, add the crushed ice cubes and blend again.
