Dal Keema

Chana dal mixed with minced meat makes for an awesome dish!

Ingredients:

500 gms Minced Meat
100 gms Chana Dal, soaked for 1 hour
225 gms Onions
20 gms Ginger
10 gms Garlic
1/2 Coconut
1 tsp Poppy seeds
1/2 tsp Cumin seeds
2 tbsp Coriander seeds
2 Cloves
1 inch piece Cinnamon
4 Red Chillies
1/2 tbsp Turmeric powder
1 bunch Fresh Coriander Leaves
1 tbsp Tamarind pulp
5 tbsp Oil
Salt to taste

Instructions

1. Roast and powder coriander seeds, cumin seeds and red chillies.
2. Grind together ginger-garlic. Grind coconut and poppy seeds separately.

Recipe: Besan Dosa

Ingredients

3 Green Chilies
1 small Onion (finely chopped)
1/4 tsp Cumin Seeds
1 cup Rice Flour
1 cup Besan (Gram Flour)
A few Coriander Leaves (chopped)
3 cups Water
Salt to taste
Cooking oil as required

How to make Besan Dosa

Make a paste of the green chilies.
In a mixing bowl, add besan, rice flour, green chili paste, cumin seeds, coriander leaves and salt.
Add water to the mixture and make it into a thin batter.
Keep a flat iron pan on medium-high heat; grease the pan with some cooking oil.

Mughlai Paratha

Ingredients

• 300 gm Maida
• 2 Eggs
• 1 tsp Baking powder
• Oil to cook
• Salt to taste

How to make

Take a big bowl and mix flour, baking powder and salt.

Rub the flour with 2 tbsp of oil.

Add little water at a time and make soft dough.

Make 8 balls from the dough and roll out into flat thick rounds.

Apply little oil, sprinkle some flour and fold it into half circle.

Again apply little oil and flour, fold it lengthwise.

Now roll it, press down and roll out into square of 8 inches by 8 inches.

Egg Chowmein

Ingredients

4 Strips egg noodles
6 Spring onions
3 Eggs
1 Garlic clove
200 gm Baby corn
1 Cup beans
2 tbsp Oil
1 tbsp Soy sauce
1tbsp Vinegar
Salt to taste
How to make Egg Chow Mein

Keep the noodles in hot water for 5-7 minutes and then drain the water.
Now cook the noodles in salted water.
Leave them to dry.
Beat the eggs and cook them till they get scrambled.
Heat oil and fry onions, beans and then add noodles to it.
Stir fry the contents for 2 minutes.
Now add soy sauce, salt and vinegar and stir fry again for 5 minutes.

Ingredients

• 500 gm Paneer (Prepare small Paneer balls)
• 4 tbsp Corn Flour
• Green chilli (10 to 15 medium sizes)
• 2 tbsp Tomato Sauce
• 1 tbsp Chilli Sauce
• 2 tbsp Soya Sauce
• Salt to taste
• Oil for frying
• 1 Green Capsicum (chopped)
• 4 Onions

How to make

Mix Paneer balls with corn flour fry it in a kadai till it become brown.
In a separate kadai, fry onions till brown.
Cut green chilli into small pieces and add it to fried onion.

Yellow Cake

Treat your taste buds with this yummy basic yellow cake.

Ingredients:

• 2 2/3 cups cake flour
• 2 t. baking powder
• 1/8 t. salt
• 1 cup (2 sticks) dairy-free soy margarine, slightly cooler than room temperature
• 2 cups granulated sugar
• 1 ½ t. vanilla extract
• 4 large eggs
• 1 cup unsweetened almond milk, soy milk or rice milk

Preparation:

Preheat the oven to 325 F. Lightly grease (with dairy-free margarine) two 8″ round cake pans, line with greased parchment and lightly flour, tapping out excess. Set aside.

Mint & tomato chutney

Mint & Tomato Chutney is all time favourite chutney to make pakoras tastier! Many more dish can be eaten with this chutney. Ingredients:

• 5 Ripe tomatoes
• 1 Small bunch of mint leaves
• 1-1/2 tsp Cumin
• 1/2 tsp Mustard seeds
• 1 tsp Urad dal
• 1 tsp Turmeric powder
• 1 tsp Red chili powder
• 1/2 tsp Asafetida
• Salt to taste
• 1 tsp Oil

Procedure

Chop Tomatoes finely.
Heat oil in a Kadhai and add mustard seeds. When they sputter, add cumin and urad dal. Fry for a few seconds.
Add the chopped tomatoes.
Fry until the tomatoes are cooked.

Shikampuri Kabab

Ingredients :

1. Kheema (Lamb/Goat) – 1lbs
2. Chana Dal – 3 tbsp
3. Egg White – 1 no’s
4. Boiled Eggs – 3 no’s
5. Ginger Garlic Paste – 1 tbsp
6. Kaju – 8 soaked and make a paste of it with little water.
7. Chilli Pwd – 1 tsp
8. Turmeric Pwd – 1/2 tsp
9. Garam Masala Pwd – 2 tsp
10. correinder and Mint finely chopped 4 tbsps
11. Salt to taste
12. Maida 2 tbsp
13. Oil for frying
14. Lemon and onion for serving

Method:

1. Mix kheema, chanadal, chilli pwd and salt in 2 cups of water and boil it on medium flame with lid closed for 30 mins.

Bihari Kabab Recipe

Ingredients
½ Kg. beef Pasanday (filets)
2 tbs. unripe papaya (grinded)
1 tsp ginger (Adrak) paste
1 tsp garlic (Lehsan) paste
1 tsp. salt (according to taste)
2 tbs. yogurt
1 tsp chili (Lal Mirch) powder OR 1 tbs. chopped green chilies
1 tbs. oil. (Preferably mustard oil)
Instructions
Mix together all the spices, yogurt and papaya and coat the beef with it.
Leave to marinate for 5-6 hours preferably overnight.
Then barbeque over charcoal or you can bake it
in an oven
Garnish with onion rings, ginger, green chilies and lemon juice.
Serve with naan

Coconut Custard

Ingredients

¾ cup Sugar
½ cup All-Purpose Flour (Maida)
Salt (to taste)
3 cups Milk
3 Egg Yolks
2 tbsp Butter
1 tsp Vanilla Essence
½ cup Coconut (grated)
2 tbsp Coconut Flakes (for decorating)

How to make Coconut Custard

Take sugar, flour, salt and milk in a saucepan.
Cook it on low a flame for 20 minutes, or until it thickens. Stir the mix continuously.
Mix in egg yolk and cook it for another 5 minutes.
Take the saucepan off the flame.
Add butter, vanilla essence and grated coconut.
Transfer the mixture to serving bowls and refrigerate until it is set.

Banana Ice Cream Shake

Ingredients

1 Banana (Peeled & Chopped)
1 cup Milk
2 Egg whites
1 tsp Vanilla Extract
2 scoops Vanilla ice-cream
How to make Banana Ice Cream Shake

Combine banana, ice-cream, milk, egg white and vanilla extract in a blender.
Blend until smooth and serve after pouring into the glasses.

Barbecued Thai Chicken Legs

A delicious thai chicken dish, crisped up on the barbecue.

Ingredients

4 chicken legs, preferably higher welfare
a bunch of fresh coriander
2 sticks of lemon grass
zest and juice of 2 limes
1 green chilli, deseeded
2 tablespoons sunflower oil
a thumb-sized piece of ginger, grated
3 cloves of garlic, peeled

Instructions

Slash the chicken legs all over with a knife.

Pick the coriander leaves and put them to one side. Add the stalks to a food processor with the rest of the ingredients and whizz to make a paste.

Baked Chicken Rice

Baked chicken with rice makes for a sumptuous meal.

Ingredients

1 cup long-grain rice, uncooked
1 cup sliced celery
1 (10oz) package frozen peas, about 1 1/2 cups
2 cups water
2 teaspoons salt
2 tablespoons butter
1 to 1 1/2 cups cooked diced chicken
2 tablespoons flour
1/8 teaspoon pepper
2/3 cup milk
1 cup shredded mild Cheddar or American cheese

Ingredients:

¼ cup Cashew Nuts (powdered)
½ kg Dates
100 g Jaggery
Silver Vark for Garnishing
1 tsp Green Cardamom (powdered)
1 cup Broken Wheat
1 litre Skimmed Milk

Procedure:

In a pressure cooker, boil dry & roasted wheat for 10 minutes.
Now add jaggery, milk and diced dates.
Cook until reduced and thickened.
Now mix cashew (powdered) and cardamom; cook for 5 minutes approximately.
Garnish it with silver vark and serve it hot.

Yogurt Fruit Salad

Ingredients

16 ounces thick and creamy key lime pie yogurt
2 tablespoons orange juice
2 cups fresh pineapple chunks
1 cup strawberry halves
2 cups green grapes
1 cup blueberries
2 cups cubed cantaloupe
¼ cup flaked or shredded coconut, toasted

Step 1
Mix yogurt and orange juice; set aside.
Step 2
In 2 1/2-quart clear glass bowl, layer fruit in order listed. Pour yogurt mixture over fruit. Sprinkle with coconut. Serve immediately.

Chicken Cheese Sandwich

Ingredients:

½ kg fried Chicken (chopped)
1 Capsicum (chopped)
2 tbsp Cheese
Few Coriander Leaves (chopped)
2 small Tomatoes
Salt (to taste)
1 small Onion (chopped)
1 tbsp Tomato Sauce
Toasted Bread Slices (as required)

Procedure:

Combine all the ingredients, except bread slices and tomato sauce. Grind into a thick paste.
Stir in tomato sauce and grind again.
Smear bread slices with the chicken paste and serve.

Burnt Corn Salad

Ruffle up some healthy salad today!

Ingredients:

2 pinches Chilli Powder
1 White Onion (sliced)
1 Capsicum (sliced)
1 Tomato (sliced)
1 Sweet Corn Cob
1 pinch Salt

Procedure:

Slightly roast the corn cob over an open flame.
Remove the corn kernels from the cob using knife and place it aside.
Take a bowl and mix capsicum, tomato, chilli powder, corn kernels and salt.
Spoon the mixed stuff and serve it.

Recipe: Rich Chocolate Cake

On Valentine’s Day, what better than a mouthful of this!

Ingredients:

150 g Dark Chocolate (chopped)
4 tbsp Water
150 g Butter
4 Eggs
1¼ cups Almonds (grounded)
½ cup Maida
2/3 cup Caster Sugar

For The Icing:
185 g Dark Chocolate (cut into pieces)
2 tbsp Milk

Procedure:

Preheat oven to 325 °F. Grease a baking pan.
Separate egg whites and yolks.
Heat chocolate with water in a saucepan on low flame, stirring constantly until melted.
Whisk butter with sugar in a bowl until creamy and puffy.
Add hot chocolate and beat nicely.

Cabbage vadas

Ingredients:

1/2 cup urad dal (split black lentils), 1 toughly chopped green chili, 1/2 tsp asafoetida (hing), 3/4 cup finely chopped cabbage, 1/2 cup finely chopped onions, 1 tbsp boiled green peas, 1/4 cup finely chopped coriander (dhania), salt to taste, oil for deep-frying.

Method :

-Clean, wash and soak the urad dal in enough water for at least 1 hour. Drain, add the chilies, asafoetida and 1/4th cup of water and blend in a mixer to a smooth paste.

Sweet Kachori

Try out some traditional Maharashtrian delicacy

Ingredients:

For cover:
250 gm Plain flour
• 1 tbsp Corn flour
• 30 gm Ghee

For filling:
200 gm Khoya
50 gm Milk powder
1/2 tsp Nutmeg, cardamom, and cinnamon powder

For syrup:
250 gm Sugar
1 Cup water
1 Big pinch saffron
Ghee for deep frying

Procedure:

Mix khoya, milk powder and other ingredients for filling.

Take a big bowl and combine plain flour, corn flour and ghee.
Using water, knead it to pliable dough. Now cover it with a wet cloth.
Boil sugar and water to form syrup, add one tbsp of milk also.

Dry Fruit Chikki

Dry fruit chikki, jaggery replaces sugar in this dry fruit chikki loaded with vitamin e, iron and zinc. Here’s my serving suggestion – cut the chikki into interesting shapes…your kids will love it.

Method

Bananas in Coconut Milk Recipe

Ingredients:
Coconut Milk – 500 ml, thin
Sugar – 100 gms
Salt – 1/4 tsp
Ripe Bananas – 4, large, cut into slices

Method:
1. Mix the coconut milk, sugar and salt in a pan.
2. Bring to a boil over low heat.
3. Keep stirring from time to time to prevent the coconut milk from separating.
4. Add the sliced bananas.
5. Cook over low heat for 5 minutes.
6. Remove and serve hot or cold as a dessert.

Fried Fish with Coconut Recipe

Ingredients:
Pomfret – 250 gms, whole, cleaned and washed
Oil – 1/4 cup

For the coconut masala paste:
Coconut – 1/4 cup, grated
Small Onions – 5 to 6, chopped
Dry Red Chillies – 4 to 5, broken into pieces
Juice of 1 Lime
Turmeric Powder – 1/4 tsp
Salt – 1/2 tsp

Method:
1. Heat a pan over low heat.
2. Add the coconut, small onions and red chillies.
3. Fry till coconut turns brown.
4. Keep aside to cool.
5. Add lime juice, turmeric powder and salt.
6. Grind to a fine paste with 1/4 cup of water.
7. Rub this paste over the fish.

Tangri Kebabs

Ingredients
500 gm chicken drumsticks

1 cup hung yoghurt

1 tsp ginger paste

1 tsp garlic paste

salt to taste

1 tsp kashmiri chilli powder

1 tsp garam masala

1 tsp coriander powder

1 tsp green chillies- chopped

1 tbsp coriander leaves- chopped

Garnish: Lemon wedges and onion rings to serve on the side

Method
Prick the drumsticks with a fork or make slashes with a knife.

Mix together with all the ingredients, except onion rings and lemon wedges.

Leave marinated for 4-5 hours, or even overnight.
