Ingredients:

1 big brinjal
5 dried red chillies
1 ½ tbsp oil
1 tbsp tamarind paste
1/4 tsp asafoetida (hing)
Jaggery
½ tsp mustard seeds
Salt to taste

Procedure:

Roast the brinjal until it turns black. Now put in a bowl of water so that it becomes easy for you to peel off the skin and mash it.

Now roast the red chillies in oil. Once the chillies cool, put them in a mixer jar. Add tamarind paste, jiggery and grind it into a paste.

Take a pan and cook the mashed brinjal and add the ground masala.

Baked Chicken Rice Recipe

1 cup long-grain rice, uncooked
1 cup sliced celery
1 (10oz) package frozen peas, about 1 1/2 cups
2 cups water
2 teaspoons salt
2 tablespoons butter

2 tablespoons flour
1/8 teaspoon pepper
2/3 cup milk
1 cup shredded mild Cheddar or American cheese

Fish filleted and cubed 1/2 kg
Yoghurt 1/2 cup
Chopped tomato 1 cup
Chopped onions 1 cup
Garlic paste 1 tsp
Grated coconut small quantity
Chilly powder 2 tsp
Turmeric powder 1 tsp
Black pepper (powder or cruhed)1 tsp
Broken cinnamon 1 tsp
Bay leaves 2
Cloves 4 pieces
Oil 2 tbsp
Lemon juice 1/2 tsp
Coriander leaves for garnishing
Salt to taste

Instructions

Take a bowel or vessel put turmeric, chilli powder, garlic paste, salt and lemon juice into the yoghurt .

Pineapple Cake

Ingredients

• 1-1/2 cup Flour
• 1 cup Pineapple juice
• 1 cup White sugar
• 1 tsp Baking powder
• 1 tsp Baking soda
• 1/2 tsp Salt
• 1/2 tsp Vanilla
• 1 tbsp White vinegar
• 5 tbsp Vegetable oil

How to make

Add flour, baking powder, baking soda, salt and sugar in a bowl.

Warm the pineapple juice in a saucepan to lukewarm temperature.

Add a small portion of crushed pineapple in pineapple juice.

Put vegetable oil, vanilla and vinegar to the mixture of flour, baking powder, baking soda, salt and sugar.

Raisin chocolates

Ingredients:

200 gms raisins
150 gms dark sweetened chocolate

Procedure:

Boil some water in a pan. Now put the chocolate bar in a glass bowl and place it over the pan with boiled water.
Let the chocolate melt.

Chocolate French Toast With Fresh Fruits Recipe

4 slices whole wheat bread

1/2 cup Milk
1 pinch Baking Powder
1 pinch Salt

2 tbsp Oil or Ghee

How to make Chocolate French Toast With Fresh Fruits:

Take a mixing bowl and break all the four eggs along with sugar, cocoa powder, baking powder and salt.
Add milk (1/2 cup) in the mixing bowl.
Mix the ingredients until you get smooth paste.
Now add vanilla essence.
Dip the bread slices into the preparation for few seconds.

Besan Dosa

Ingredients

• 3 Green Chilies
• 1 small Onion (finely chopped)
• 1/4 tsp Cumin Seeds
• 1 cup Rice Flour
• 1 cup Besan (Gram Flour)
• A few sprigs Coriander Leaves (chopped)
• 3 cups Water
• Salt to taste
• Oil as required

How to make

Grind the green chilies into a fine paste.

Add besan, rice flour, green chili paste, cumin seeds, coriander leaves and salt in a bowl and mix well.

Mix some water to the mixture and whip it into a thin batter.

Apply little oil on the pan kept on medium flame.

Achari Mutton

Ingredients:

5 Onions
5 Tomatoes
750gms Boneless mutton
½ tsp Turmeric powder
1 tsp Mustard seeds
1 tsp Kalonji (onion seeds)
5 Cloves
1 tsp saunf (fennel seeds)
1 tsp Red chili powder
2 tbsp Ginger
2 tbsp Garlic
½ cup Coriander (chopped)
8 Whole Red Chillies
1/2 cup
7 tbsp Mustard Oil
Salt (according to taste)

Procedure:

Chop onions and tomatoes.

Roast the whole spices separately. Grind them altogether.

Spicy Chicken Spring Rolls

Ingredients:

4 cups oil for frying
20 ounces canned chicken chunks (shredded and drained)
1 onion
1/2 cup cabbage (shredded)
1 carrot
1/4 cup barbeque sauce
1 dash hot sauce, soy sauce, and Worcestershire sauce
20 spring roll wraps

How To Make:

1. Shred onions and carrots in a cheese grater.
2. Heat oil in a pan for deep frying.
3. Mix the chicken, veggies, and sauces in a bowl.
4. Place the mixture full the centre of spring roll wraps.
5. Dip fingertips in water and moisten edges of wraps, then roll mixture and seal the edges.

Hariyali Kabab

Ingredients:

100 gm Palak Leaves (spinach) (boiled & mashed)
4 Green Chillies (chopped)
4 Potatoes (boiled and grated)
1 Cup Green Peas (boiled)
1 cup Coriander Leaves (chopped)
1 tsp Cornflour
1 tsp Ginger (chopped)
1 tsp Chaat Masala
Salt
Oil

Take a bowl and mix all the ingredients in it.
Roll the mixture into kebabs-shaped flat balls.
Deep fry the kebabs in hot oil and then serve with chutney.

Imli Poha

Tamarind paste- 4 tablespoon
Mustard Seeds- ½ a spoon
Urad Dal- ½ a spoon

Procedure:

Wash poha, soak it for a while and then drain the water.
Add some water to the tamarind paste.
Now add this tamarind water to the poha and mix evenly.

Hot and Sour Cabbage

Ingredients
•Cabbage,cut into 1 inch cubes and layers separated 1 medium
•Oil 2 tablespoons
•Sichuan peppers,crushed 12-15
•Dried red chillies 2
•Salt to taste
•Brown sugar 1 tablespoon
•Light soy sauce 1 tablespoon
•Vinegar 3 tablespoons
•Sesame oil (til oil) 1 teaspoon
Method
Heat oil in a non-stick wok, add Sichuan peppers and red chillies and sauté for a minute. Add cabbage, mix well and sauté for two minutes. Add salt and brown sugar and sauté for a minute.

Add soy sauce, vinegar and sesame oil, mix well and sauté for one to two minutes. Serve hot.

5 ounces Barnham and Bailey Animal Crackers,or, Sweet Digestive Biscuits,(but no extra sugar with these).

Ingredients

2 cups potato cubes
2 cups green peas
2 cups sliced onions
1/2 cup chopped onions
1/2 tsp saffron (kesar) strands
2 tbsp fresh curds (dahi)
2 tbsp chopped coriander (dhania)
2 tbsp oil
salt to taste
oil for deep-frying

To Be Ground Into A Paste
2 tbsp coriander (dhania) seeds
1 inch ginger (adrak) piece
6 cloves (laung / lavang)
4 green chillies
Method
Heat oil in a pan and fry the sliced onions until golden brown in colour.
Cool and blend to a smooth paste in a blender.

Peanut Butter Noodles

Ingredients
•Peanut butter 2 tablespoons
•Flat noodles,boiled 2 cups
•Spring onions with greens 7-8
•Ginger,chopped 1 inch piece
•Garlic,chopped 6-7 cloves
•Fresh red chillies,chopped 2
•Oil 1 tablespoon
•Dark soy sauce 1/4 cup
•Green capsicum,cut into strips 1/2
•Brown sugar 2 tablespoons
•Vinegar 1 tablespoon
•Bean sprouts 1/2 cup
•Roasted peanuts 1/4 cup
Method
Slice spring onion bulbs. Heat oil a non-stick wok, add spring onions and sauté for half a minute. Add ginger, garlic and red chillies and sauté for half a minute.

Recipe: Sabudana Kheer

Ingredients

• 1 tbsp Sago granules (Sabudana)
• 4 cups Milk
• 1/4 tsp Cardamom Powder
• 3/4 cup Sugar
• 1 cup Water

How to make

Wash the sago granules(Sabudana) and drain.

Leave aside for 10 minutes.

Loosen the Sabudana when moisture is absorbed.

Heat water and add sago granules.

Bring to a boil. Stir constantly.

Simmer it for 5 minutes.

Add more water if needed.

Pour milk and bring the mixture to a boil.

Cook for about five minutes.

Add sugar and cardamom.

Keep stirring occasionally.

Cook till Sabudana becomes soft but not mushy.

1. Preheat oven to 180°C.
2. Break eggs into a bowl, add salt, one-fourth teaspoon crushed peppercorns, half teaspoon crushed red chillies and whisk till frothy.
3. Add cream, cottage cheese and processed cheese and whisk again till thick and well combined.
