Besan Dosa Recipe

Ingredients

• 3 Green Chilies
• 1 small Onion (finely chopped)
• 1/4 tsp Cumin Seeds
• 1 cup Rice Flour
• 1 cup Besan (Gram Flour)
• A few sprigs Coriander Leaves (chopped)
• 3 cups Water
• Salt to taste
• Oil as required

How to make

Grind the green chilies into a fine paste.

Add besan, rice flour, green chili paste, cumin seeds, coriander leaves and salt in a bowl and mix well.

Mix some water to the mixture and whip it into a thin batter.

Apply little oil on the pan kept on medium flame.

Recipe: Aloo Chaat

Ingredients

• 3 Potatoes (boiled and peeled)
• 1 tsp Chaat masala
• 1 tsp Roasted Cumin Powder
• 1 tbsp Tamarind Chutney
• 1/2 tbsp Mint Chutney
• 1/2 tsp Red Chilli Powder
• Oil for frying
• Chopped Coriander Leaves
• Salt as per taste

How to make

Dice the boiled potatoes into 3/4 inch cubes.

Deep-fry the potatoes in oil till golden brown.

Soak excess oil on a paper.

Mix the fried potatoes in a bowl with cumin powder, red chilli powder, salt, chaat masala and mix thoroughly.

Cauliflower Chili Fry

Ingredients
• 1 cup Cauliflower (diced)
• 3 tsp Curd
• 2 Green Chilies
• 4-5 Curry Leaves For Batter
• 2 tbsp Rice Flour
• Red Chili Powder (to season)
• Salt (to taste)
• Water
• Oil

How to make

Mix all the ingredients, listed for batter, to make a thick paste.
Add cauliflower to this paste, mix well and deep fry them, keep them aside.
Heat oil in a pan and light fry curry leaves.
Add in green chilies and curd.
Then,add cauliflower mix well and serve.

Hot and Sweet Chicken Wings

Ingredients:

Chicken wings, 8
Salt, a pinch
Ginger paste, 1 teaspoon
Garlic paste, 2 teaspoons
Cornflour/corn starch, 1/4 cup
Paprika powder, 2 teaspoon

Sesame oil (Til oil), to taste

For the Hot and sweet sauce

Light soy sauce, 2 tablespoons
Malt vinegar, 1 tablespoon
Sugar, 1 tablespoon
Ginger juice, 1 teaspoon
Garlic, chopped, 5 cloves
Fresh red chillies, slit, 2
Green chillies, slit, 2

Procedure:

Take salt, ginger paste, garlic paste and paprika powder in a bowl.

Chicken Popcorn

Ingredients

• 500 g Chicken Breasts (cut into cubes)
• 5 tbsp All-Purpose Flour
• 1 tsp Paprika
• Salt and Black Pepper
• Cayenne Pepper
• 1 tsp Marjoram
• Garlic Powder
• Vegetable Oil

How to make

Mix flour with paprika, garlic powder, salt, black pepper, cayenne pepper, and marjoram in a large bowl.

Pour some water in it to make a thick batter.

Dip chicken breast cubes in it, and ensure they are properly coated.

Heat some vegetable oil in a pan and toss in the chicken breast cubes.

Fry until golden brown and crispy.

Ingredients:

11/2 Cup Long Grain (Basmati) Rice
1 cup green peas
50gms paneer (cut into small cubes and deep fried)
A small bunch of methi (fenugreek) leaves (chopped)
2 tomatoes (chopped)
4-5 flakes of garlic (paste)
2-3 green chilies (chopped)
1/4th tsp. turmeric powder
Red chili powder to taste
Salt to taste
1tbsp oil/butter

Instructions

Wash methi properly and drain the water and keep aside.
Heat oil in the pan and add garlic paste and fry till light brown.

Ingredients:

1 kg Chicken
1/2 kg Onions (cut into rings)
250g Yogurt
2 tsp Chilli Powder
25g whole Garam Masala
2 tsp Salt
1 tbsp Ginger-Garlic Paste
1 tsp Turmeric (Haldi)
1 tsp Garam Masala Powder
1 tsp Coriander Powder
250g Tomato Puree
250g Oil
4 Eggs (boiled)

Procedure:

Heat oil in a wok (kadhai) and add whole garam masala to it.
On a grinder, take the yogurt, fried onions, blend it together and add into the kadhai.
Add, ginger-garlic paste to the mixture and garam masala and cook for a while.

Recipe: Chocolate pudding

Ingredients

• 1-1/4 cups Dark chocolate, chopped
• 1/2 cup Milk
• 1 cup Bread Crumbs
• 2 tbsp Butter
• 1 tbsp granulated Sugar
• 1/2 cup Condensed milk
• 1/2 tsp Vanilla essence
• 1/4 cup walnuts

How to make

Heat the dark chocolate till it melts, then add milk to it and mix well.

Mix the bread crumbs to it.

In another bowl whisk butter and sugar till light and fluffy.

Pour condensed milk, vanilla essence, walnuts and Dark chocolate mixture and mix well.

Pour this mixture into a greased cake tin, cover it with a foil paper.

Bread Chutney

This delicious chutney preparation compliments rotis, pooris and bread.

Ingredients:

• 2-3 Slices of bread
• 1 tbsp Mustard seeds
• 1 Onion, sliced
• 1 Tomato, chopped
• 1/2 tsp Asafetida
• A little tamarind
• Salt to taste
• 4 Green chilies
• Coconut scrapings
• Small bunch of coriander leaves, chopped
• Ghee or oil, for frying

Procedure:

Cut the bread slices into small pieces.
Fry these pieces in ghee or oil. Keep aside until cool.
Heat oil in a pan and add mustard seeds.

Almond Banana Cake

Ingredients:

¾ cup Banana Puree
½ cup sliced Almonds
250 g raw whole Almonds (toasted)
2 tbsp Lemon Juice
Icing Sugar (to garnish)
2 tsp Vanilla Extract
½ tsp Baking Powder
½ cup Sugar

How to make Almond Banana Cake:

Preheat oven to 300 degrees F.
Butter a heart-shaped flan tin and place a baking sheet on it.
Grind whole almonds in a grinder, until finely powdered.
Beat eggs with sugar until pale and fluffy.
Add almond powder, banana puree, vanilla extract, and lemon juice. Mix until uniformly combined.

Hyderabadi Kheer Puri

Ingredients For Chawal ki Kheer (Rice Kheer):

1 litre Milk
1/3 Cup Rice Powder ( powder) soaked rice 1- 2 hours / dried the rice grind into powder
1 cup sugar
4 cardamom (elaichis)
3 tbsp Nylon Sago (Subhudhana)- Soaked overnight/soaked for 1-2 hours (optional)
1 big pinch Saffron threads (soaked into a hot milk)

Method

Bean Chili

Ingredients:

2 cup Red/Black Beans (soaked overnight)
1 Bell Pepper
2 tbsp Vegetable Oil
1 cup hot Salsa
1 cup chopped Onions
3 tbsp Tomato Sauce
1 tbsp Chili Seasoning

How to make Bean Chili:

First, cook beans in ample of salted water until tender but firm and then drain the water.
Heat the oil in a frying pan over medium heat.
Stir-fry the pepper and onion until golden.
Add the beans and cook over high for 7-8 minutes, stirring frequently.
Add salsa and tomato sauce and cook on low for 2-3 minutes.

Andhra tomato Rice Recipe

Ingredients:

2 Cups Basmati Rice
6 Tomatoes
1 Onion (medium sized)

How to make Andhra tomato Rice:

First, wash the rice and soak them in water for 30 minutes. Now chop all the vegetables finely.
Take a pan and heat the oil. Add all the spices and cook them for not more than 2-3 minutes.

Recipe: Sticky Chocolate Cake

Ingredients:

½ cup All-Purpose Flour (Maida)
¼ cup unsweetened Cocoa Powder
1 1/3 cups Sugar
Salt (to taste)
1 tbsp Vanilla Extract
½ cup Butter (melted)
2 Eggs

How to make Sticky Chocolate Cake:

Preheat the oven to 300°F. Grease an 8″ pie plate with little butter.
Strain together flour, salt and cocoa powder into a bowl.
Take sugar and eggs in a seperate bowl and beat well.
Put in flour mixture and mix until well blended.
Mix in vanilla extract and butter. Blend well.
Transfer the mixture into the pie plate.

Method

Ingredients:

1/3 cup Butter
1/2 cup All-Purpose Flour (Maida)
1 cup Potatoes (mashed)
1 tsp Salt
1 tsp Pepper
Little Poppy Seeds (Khuskhus)

How to make Potato Sticks:

Take butter, flour, mashed potatoes, salt and pepper in a bowl. Mix until well combined.
Shape the mixture into small sticks.
Transfer onto a slightly greased baking pan.
Spread poppy seeds over it.
Bake in an oven at 375°F for 20 minutes, or until golden brown.
Serve hot with tomato & chilli sauce.

Herbed Baked Bean Rice

Ingredients
•Cooked rice 3 cups
•Fresh herbs,chopped (thyme, oregano, rosemary, basil) 2 tablespoons
•Baked beans 1 1/2 cups
•Olive oil 1 teaspoon
•Garlic,finely chopped 2 teaspoons
•Salt to taste
•Fresh oregano for garnish sprig
Method
Heat oil in a non-stick wok, add garlic and sauté till translucent. Add baked beans and mix. Add herbs and mix again. Add salt, mix well and cook for a while.

Add rice, mix well lightly, ensuring that the rice grains do not break. Cook for a minute. Serve hot garnished with oregano sprig.

Apple Custard Pie

Ingredients:

1 (9-inch) Unbaked Pie Crust
1½ cups Applesauce
½ cup Sugar
½ tsp Cinnamon Powder (Dalchini)
¼ tsp Salt
3 Eggs
1½ cup Milk

How to make Apple Custard Pie:

Mix together eggs and sugar in a large mixing bowl and blend well.
Add applesauce, cinnamon, salt and milk. Mix well.
Place pie-crust into a 9-inch pie pan and pour the prepared mixture over the crust.
Bake in oven at 450 degrees F for 8-10 minutes.
Reduce the heat to 350 degrees F and bake again for 40-45 minutes, or until a knife inserted comes-out clean.
Cool & serve.
