Fried Egg Sandwich

Try out this mouth watering sandwich to impress your friends and family.

Ingredients:

2 teaspoons butter
4 eggs
4 slices processed American cheese
8 slices toasted white bread
Salt and pepper to taste
2 tablespoons mayonnaise
2 tablespoons ketchup

Procedure:

Melt butter in a skillet over medium high heat.
Crack eggs in pan and cook to desired firmness.
Place a slice of cheese over each egg just before it is cooked.
Place each egg on a toasted slice of bread after cheese has melted.
Season the eggs with salt and pepper.

Italian Cassata

Savour the sumptuous Italian Cassata ice cream.

Ingredients:

• 1 Litre vanilla ice cream
• 300 ml Cream
• 1/2 tsp Almond essence
• 1/2 Cup toasted almonds
• 50 gm Dark chocolate
• 2 tbsp Sugar
• 1/2 Cup glace fruit, chopped

Procedure:

• Soften the ice-cream and combine the almond essence with it.
• Line the base and sides of 1 litre pudding basin leaving a cavity in the centre for the fruit mixture.
• Freeze till firm.
• Whip cream and sugar together till the peaks form.
• Now chop chocolate and almonds.

Stuffed Eggs

Try out this lip smacking stuffed eggs.

Ingredients:

4 eggs (hard boiled)
1 tbsp ghee / oil
1 tbsp chopped onions
3 tbsp cooked ground / minced meat
Salt to Taste
1 green chili (chopped)
1/2 tsp ginger (grated)
1 tbsp tomato paste
1 tbsp corn flour / corn starch
1 egg (beaten)
1 tbsp coriander leaves (chopped)
1 lemon juice
Breadcrumbs for coating
12 pieces of liver (fried) for garnishing
Oil for deep-frying

Procedure:

Heat the oil / ghee in a frying pan and fry the onions till golden.

Banana Chaat

Ingredients:

3-4 bananas
1 tsp Lemon juice
Salt to taste
Chaat Masala

Procedure:

Peel the bananas and cut them into small pieces. Now add lemon juice, salt and chaat masala. Mix well and serve.

Melon Magic

Capsicum Raita

Ingredients
•Red capsicum,peeled and cut into small pieces roasted 1 medium
•Yogurt 1 1/2 cups
•Black salt (kala namak) 1 teaspoon
•Salt to taste
•Red chilli powder 1 teaspoon
•Roasted cumin powder 1 teaspoon
•Fresh mint leaves,chopped 1 tablespoon
Method
Place yogurt in a bowl and whisk till smooth. Add red capsicum pieces, black salt, salt, red chilli powder, cumin powder, mint leaves and mix well. Chill and serve.

Barbecue Chicken Melt

Ingredients
•Chicken,boiled and shredded 350 grams
•focaccia bread 1
•Black olives,pitted and chopped 7-8
•Barbeque sauce 2 tablespoons
•mixed bell peppers,cut into strips 1/2 cup
•Mozzarella cheese,grated 6 tablespoons
•Fresh basil leaves 3-4
Method
1. Cut focaccia bread into 3 long slices.

2. Combine chicken, barbecue sauce and mixed bell peppers in a bowl. Mix well.

3. Place chicken mixture on slices and top each slice with 2 tbsps grated mozzarella cheese.

4. Place the slices in the brick pizza oven and bake till crisp.

Chicken Parcels

Ingredients
•Boneless chicken breast,cut into small cubes 1
•Oil 2 tablespons + to deep fry
•Onion ,chopped 2 medium
•Garlic,chopped 2 tablespoons
•Ginger,chopped 1 tablespoon

•Crushed black peppercorns 1/2 teaspoon

Method
1. Heat sufficient oil in a kadai.

2. Heat 2 tbsps oil in a non-stick pan, add onions, garlic and ginger and saute.

Cold Watermelon Soup

Ingredients
•Watermelon peeled, seeded and cut into small pieces 1 medium
•Ginger,roughly chopped 2 inch
•Fresh coriander stems 4-5
•Roasted cumin powder 1 teaspoon
•Salt to taste
•Sugar 1 teaspoon
•Lemon juice 1 tablespoon
•Tabasco sauce 1/2 teaspoon

Spicy Hot Chocolate

Ingredients
•Cinnamon powder 1/2 teaspoon
•Fresh red chilli,deseeded and slit 1
•melted dark chocolate,+ for lining ¼ cup
•Soya milk 4 cups
•Coffee powder 1/2 tablespoon
•vanilla extract 1/2 teaspoon
•Salt 1/2 pinch
•Castor sugar (caster sugar) 2 tablespoons
•Brandy 8 tbsps
Method
1. Heat soy milk and ¼ cup melted chocolate in a deep non-stick pan. Stir well.

2. Add coffee powder, cinnamon powder, vanilla extract and red chilli. Stir to mix.

3. Add salt and mix well. Cook for a minute and discard the chilli.

Apple Soya Shake

Ingredients
•Apple 3
•Soya milk 2 cups
•Sugar 3 tablespoons
•Cinnamon powder,+ for sprinkling 1 teaspoon
•Ice cubes as required
•Apple slices for garnish
Method
1. Core the apples and cut into small cubes.
2. Place the apple cubes, sugar, one teaspoon cinnamon powder, soya milk and ice cubes in a blender jar. Blend well.
3. Pour the drink into individual glasses, sprinkle some cinnamon powder and garnish with apple slices.

Chickpeas Spinach Vada

Ingredients
•Chickpeas (kabuli chana),cooked 2 1/2 cups
•Spinach leaves (palak),chopped 1 medium bunch
•Cumin powder,roasted 1 teaspoon
•Red chilli powder 1 teaspoon
•Garlic cloves 4-5
•Jalapeno 4-5
•Salt to taste
•Gram flour 1 tablespoon
Method
1. Put chickpeas, cumin powder, red chilli powder, garlic cloves, jalapenos and salt in a blender and blend coarsely. Transfer the mixture into a bowl.
2. Add chopped spinach and mix well. Add gram flour and mix well.
3. Heat sufficient oil in a kadai.

Banana Halwa

Ingredients:

1/4 tsp Cardamom Powder
4-5 tbsp Sugar
4 Ripe Bananas
2-3 tsp Ghee (clarified butter)

How to make Banana Halwa:

First, peel off and mash the bananas.
Heat ghee in a frying pan.
Add bananas and cook over low heat, stirring to prevent the mixture from sticking.
Cook for 10 minutes over medium flame or until bananas have turned golden brown.
Add more ghee if necessary.
Now, add sugar after 4-5 minutes and continue stirring until dissolved.
Add cardamom powder to the halwa and turn off the flame.
Keep on stirring till the mixture becomes thicker.

Mutton Achari

Ingredients:

5 Onions
5 Tomatoes
750gms Boneless mutton
½ tsp Turmeric powder
1 tsp Mustard seeds
1 tsp Kalonji (onion seeds)
5 Cloves
1 tsp saunf (fennel seeds)
1 tsp Red chili powder
2 tbsp Ginger
2 tbsp Garlic
½ cup Coriander (chopped)
8 Whole Red Chillies
1/2 cup
7 tbsp Mustard Oil
Salt (according to taste)

Procedure:

Chop onions and tomatoes.

Roast the whole spices separately. Grind them altogether.

Add the chopped ginger-garlic in a kadahi with heated oil in it. Add coarsely ground masala powder.

Keep stirring.

Honey and Fruit Smoothie

Ingredients:
Honey, 5 tablespoons
Ripe mangoes (Peeled and Chopped), 2
Ripe Bananas (Peeled and Chopped), 2
Ice cubes (Crushed), 8 to 10
Yoghurt, 2 cups
Lemon Juice, 2 tablespoon
Fresh Mint Leaves, to garnish

Procedure:
Refrigerate the mango and banana slices for about an hour.
Once the fruits are frozen, place the fruits, yoghurt and honey in a blender.
Blend everything until the consistency is smooth.
To the mixture, add the crushed ice cubes and blend again.
Pour into individual glasses and garnish the smoothie with mint springs.

Rose Falooda

Ingredients:

2 Cups milk
1 Packet falooda sev
2 tsp Rose water
1/2 tsp Soaked tukmuri seeds

How to make Falooda:

Boil the sev in water for 20 minutes.
After the sev gets softened, drain the excess water.
Boil the sev in some milk over medium heat for 15 minutes.
Now, add ice to cool down the boiled sev.
Put the sev in glasses.
Add rose water and soaked tukmuri seeds.
Pour in milk and add ice.
Top it with a scoop of vanilla ice cream.
Falooda is ready to be served.

Mexican Pizza

Ingredients:

1 Corn Meal Pizza Crust

1 cup Salsa

2 Tomatoes, finely diced

110 gm chopped Green Chilies

1/4 cup chopped Onions

1 cup Shredded Low-Fat Cheddar Cheese

Method:

Top the cornmeal pizza crust with salsa, tomatoes, chilies, green pepper, onion, and cheese.

Until the cheese melts, bake the pizza at 350 degree F for about 10 minutes,

Ready to eat.

Til Khoya Laddoo

Ingredients

• 1-½ cups Roasted Til (crushed)
• 2 tbsp Almonds & Pistas (chopped)
• Powdered Sugar to taste
• 2 cups Khoya

How to make

Roast khoya on low flame till it turns light golden-yellow in color. Allow it to cool for a few minutes.

Now add crushed sesame seeds (til) to roasted khoya and mix it well.

Add powdered sugar to the above mixture when it is lukewarm.

Mix well and shape the mixture into small balls. Avoid too hot mixture so as to prevent the melting away of sugar.

Garnish the laddoos with chopped almonds and pistas.

Mughlai Chicken

Ingredients:

• 750 gms chicken cut in pieces
• 2 Cinnamon Sticks
• 300 gm Ghee
• 2 Medium Sized Onions (grated)
• 3 Lightly beaten Eggs
• 4 tsp Sugar
• 6 tsp Ground almonds
• 1-1/2 inch Ginger (grated)
• 9 Garlic cloves
• 6 Green cardamoms
• Flaked almonds for garnishing
• Salt to taste
• 5-6 tbsp Thickened Cream (whisked)

Procedure:

• Heat the ghee in a large cooking pan.
• Fry the onions with the salt until it turns light brown.
• Pour the ginger, garlic, cardamoms, and cinnamon sticks into the pan.

Ramsay’s favourite combo: Rockford Reserve with Delhi’s kebabs

Scotland’s John Ramsay, a name to reckon with in the world of whisky, says that fine whisky will continue to be popular among Indians. He feels that Rockford Reserve can be best enjoyed with a variety of ‘kebabs’ available in the Indian capital.

Ramsay, who created Rockford Reserve in 2012 for the Indian palate, is hopeful about the alcohol’s popularity in the country.

Maladoo

Ingredients:

Fried Gram 1 Cup
Sugar – 1 Cup
Ghee – 1 Cup
Cardamom powder – 1 teaspoon
Cashew nuts – 5
Almonds- 5

Procedure:

Put the fried gram in a mixer jar along with sugar and grind it very well.

Now fry the cashews and almonds in ghee until brown and keep them aside.

Heat some ghee in a pan, add cardamom powder. Then add the ground gram flou and sugar powder to the ghee and mix well.

Add the fried dry fruits and mix thoroughly.

Take some quantity of this mixture in the hand and roll it into a ball.

Make same sized balls of the remaining mixture.

Shahi Toast(Eggless bread pudding)

Shahi Toast is rich bread pudding. Toasted bread covered with creamy milk known as Malai. This is delicious and easy recipe to make.

Ingredients:

3 slices of firm white bread
1-1/2 tablespoons unsalted melted butter or ghee
2 cups milk
2 tablespoons sugar
4 Green Cardamoms – shelled and the seeds crushed
1 tablespoon sliced almonds
1 tablespoon sliced pistachios

Method:

Remove the crust from all sides of bread and butter the bread slices from both sides generously. Cut the slices in two.

Vegetable Cheese Frankie

Ingredients:

1/2 cup all purpose flour(maida)
1/2 cup wheat flour
3/4 cup water
2 boiled potatoes(smashed)
1/2 cup chopped onions
1 clove garlic(finely chopped)
2 green chillies(finely chopped)
1 capsicum(chopped)
1/2 cup chopped tomatoes
1/2 cup boiled green peas
1/2 tsp turmeric(haldi)
1/2 tsp red chilli powder
1/2 tsp dry mango powder(amchur)
1 tsp garam masala
2 tbsp oil
salt to taste
chopped cilantro(coriander)
For serving:

thinly chopped onions
amchur(dry mango powder) or chaat masala
grated cheese
