Sabzi Masala

Ingredients

1 carrot
250 g bottle gourd
250 g cauliflower (break flowers)
1 capsicum
1 potato(cut all veg into small pieces)
1/2 cup peas
1/2 cup boiled chickpeas
250 g yogurt
2 tbsp red chilli powder
1 tbsp cumin powder
1 tbsp coriander powder
1/2 tsp mace and nutmeg powder
2 tbsp ginger,garlic paste
ginger powder 2 pinches
salt to taste
1/2 cup oil
Directions
Heat oil in a pot and fry ginger/garlic till golden.
Add vegetables and chick peas and fry for 15 minutes.
Add remaining ingredients and cook on low flame with lid on.

Almond Peanut Butter Cookies

Ingredients

½ cup of granulated sugar
½ cup of brown sugar
½ cup of peanut butter (chunky optional)
¼ cup of shortening
¼ cup butter softened
1 egg
1 ¼ cup of all purpose flour
¾ tsp baking soda
½ tsp baking powder
1 cup of sliced almonds
¼ tsp salt
Directions
Mix wet ingredients peanut butter, shortening and egg and butter in a bowl.
In a bigger bowl add sugar, salt and flour and almonds.
Add baking powder and baking soda into the dry ingredients.
Now mix all wet ingredients in dry ingredients, add slowly and mix well.

Spicy Bun

Ingredients

1 big Onion (chopped)
2-3 Green chillies (chopped)
1/2 tsp Green Chilli paste
2 tsp Cumin seeds (jeera)
3-4 tbsp Coriander leaves (Cilantro)
2-3 Curry leaves (finely chopped)
2-3 Mint leaves (finely chopped – optional)
2 tsp Salt
2 tsp Sugar
1 1/2 tsp Dry Yeast
2 tbsp Unsalted Butter
3 tbsp Vegetable Oil
3/4 cup Water
1 cup Maida (All purpose flour)
1 cup Whole Wheat flour

Ingredients

1 pound chicken kheema
2 tblsn ginger garlic paste
1 tablespoon dhania powder
1 tablesponn zeera powder
1 tspn haldi
1/2 cup kasoori methi or feresh chooped methi leaves
8-10 baby eggplants round
dhania leaves chopped
2 medium chopped onions
1 medium chopped potato
chilly powder as per your taste
salt as per your taste

Almond Dates Honey Balls

Ingredients

1 cup Almonds
1 cup Dates
1 tbsp Honey
a small pinch of Salt
2-3 drops Vanilla Essence
2 pinches of Cinnamon powder
1/2 cup fine shredded Coconut for rolling.
Directions
Soak Almonds for 3-4 hrs. De-skin & slice thinly. Leave on a paper towel for sometime. Dry roast till golden brown.
Steam the Dates for 25-30 mins by covering a lid.
Grind cooled Almonds to fine powder. Add the steamed Dates to it & grind again until everything comes together.
Remove the Dates & Almond mixture to a bowl. Add the remaining ingredients & mix well.

Mutton Paradox

Ingredients

1/2 kg mutton pieces-(marinated with 1/4 tsp turmeric powder,3/4 tsp chilli powder and 1 tsp salt for 30 mins at least)
3 big onions – chopped fine
3 big tomatoes-chopped fine
1 1/2 tsp jeera powder
1/2 tsp shahjeera(black cumin seeds)
4 green chillies-slit lengthwise
1 tsp coriander powder
1 tsp chilli powder
1 tsp ginger paste
1 1/2 tsp garlic paste
1 1/2 tbsp ground paste of(2 tsp poppy seeds + 8 cashewnuts)
few curry leaves(optional)
few coriander leaves
1 tsp salt
2 tbsp refined oil
2 tsp ghee
150 ml water

Egg Curry with Green Mutter

Ingredients

4 – boiled eggs
1 cup – green peas
2 – tomato, medium
2 – onion, medium
10 cloves – garlic
a small piece – ginger
250 ml – full cream milk
kitchen king masala 1 tbsp – salt
turmeric & chilly powder according to taste
Directions
Grind onion, garlic & ginger.
Fry them in hot oil till light brown.
Add peas, salt, turmeric & chilli powder & fry for 3 minutes.
Then add tomato paste, fry till the oil is separated.
Add 250gm full cream milk & cook for 5-7 minutes, stirring continuously.
Now add boiled egg into this mixture & kitchen king masala too.

Mixed Veg Masala Stuffed Chapati

Always remember that U shd prepare the Veg masala stuffing as dry as possible and without much oil.U canalso prepare Chapatis with stuffed chicken or stuffed Aloo(potato)-replacing those ingredients with Mixed vegetables in this recipe.Just cook with the boiled and shredded chicken pieces instead of mixed vegs.Try this recipe with Mushroom and capsicum masala stuffing -which also has a terrific taste.If u were not able to spend time spreading the stuffing inside,just add the stuffing to the dough – knead it for a min more and then spread the chapatis or u can roll it with Mixed Veg masala insi

Moongdal ki kadhi

Ingredients

1 ltr buttermilk
1/2 cup moong dal paste
1 1/2 cup boiled mixed veggies (peas, cauliflower, beans, carrot)
1/2 tbsp garlic paste
1/2 tbsp ginger, chopped
1/2 tsp jeera
1/2 tsp turmeric powder
1 tbsp Green chilli chopped salt to taste
1 onion chopped
1 tomato chopped chopped
coriander for garnishing
Directions
in a heavy bottom degchi mix dal paste and buttermilk. put on gas for cooking. stir continuously for 10 min.
Cook kadhi for 1/2 hr on low flame.
Now mix veggies. cook for another 15 minutes. prepare tadka with rest of the ingredients.

Shahi kadai paneer

Ingredients

1 large onion
2 capsicum (bell pepper)
5-6 green chillies
250 g cottage cheese
2 tsp yogurt
1 tsp cashew nut,raisins & ground nut paste
1/2tsp jeera powder
1/2tsp dhania powder
1/2tsp haldi powder
1/2tsp sugar
1/2tsp kasuri methi
1/2tsp garam masala
1 no.large tomato
oil for cooking
salt to taste.
Directions
Mix yogurt, cashew nut,groundnut&raisin paste and make a smooth mixture.
Cut the capsicum&onion in medium size.
Heat oil in a kadai and add the onion and fry till its brown in color.
Now add capsicums,tomato,green chillies&all dry masalas.

Easy Banana Bread

Ingredients

2 cups wheat flour
2 tsp baking powder
1 tsp baking soda
½ cup refined oil
1 cup powdered sugar
3 eggs
½ tsp vanilla essence
2 bananas (finely chopped)
2 tbsp chopped wallnuts
Directions
Sieve wheat flour, baking powder and baking soda together. Keep it aside.
In a grinder jar take oil and sugar and churn for 10 to 15 seconds
Put all the eggs in the grinder and churn for a minute.
Add vanilla essence and churn to mix.
Take the mixture out in a mixing bowl.
Add the wheat flour mixture and mix with a wooden spoon till well mixed.

Chicken Changezi

Ingredients

1 Chicken, cut in pieces
1 Egg boiled
For Gravy
30 gm desi ghee
300ml milk
1 tbsp ginger garlic paste
250 gm tomato paste
1 tbsp coriander powder
½ tbsp chilly powder
¼ tbsp garam masala
80 g amul cream ( or fresh cream )
½ tbsp chaat masala
2 lemon ( juice)
15 g ginger cut in small pieces
2 green chillies cut long
½ tbsp dried methi leaves (kasoori methi)
20-25 makhane ( puffed lotus seeds ) ,fried in ghee
Salt to taste
50 g kaju
¼ cup water
3 onions cut
Directions

Roast the chicken pieces and keep them aside

Aloo Gobhi Bhujia

Ingredients

Cauliflower 225 gm
Potatoes 55 gm
Salt To taste
Onion 50 gm
Oil 30 ml
Cumin Seeds ½ tsp
Green Chillies 5 gm
Lime 1 no
Red chilly powder ½ tsp
Turmeric ¼ tsp
Coriander Powder ½ tsp
Coriander Leaves Few sprigs
Directions
Wash and clean the vegetables.

Badami Malai kofta curry.

Ingredients

For koftas:
1/2 kg chicken mince or fat free beef.
1/2 tsp salt
1/2 tsp ginger/garlic paste
1 tsp cinnamon/cardamom powder.
1 tbsp curd
1 egg
Oil for frying
For gravy:
1/4 cup ghee
6 cardamom
1 stick cinnamon
1 onion (thinly sliced fried till golden & crushed with hands).
1 tsp ginger garlic paste.
1/2 cup curd + 7- 6 almond blended to a paste
1/4 tsp Saffron + 2 tbsp rose water
2 tbsp Fresh Malai
Directions
In a pot put all kofta ingredients together leaving out 2 tbsp raw mince and the egg. & cook till water has dried out ( like Shami kababs).

Bread Rasmalai

Ingredients

500 ml. milk
4 slices of bread
1/2 cup sugar
2 tsp. chopped mixed nuts (dry fruits)
1 tsp. Ghee
2 tsp. fresh malai (cream)
1/2 tsp. cardamom powder
1-2 threads of saffron
Directions
Boil milk till reduced to half. Add sugar, cardamom powder and saffron (dissolved in a little milk) towards the end of the process.
Cut the bread slices into round shape with the help of a round object of sharp edge.
Apply a little ghee on both sides and toast it on a tava very lightly (not brown).
Mix the nuts with the cream or malai and apply on one side of two bread pieces.

Corn curry

Ingredients

2cups corn
1 tbsp oil
2 cardamoms
1/4 cup chopped onion
2 tomatoes chopped
1/4 cup curd
1/4 tsp chilli powder
a pinch of haldi
salt to taste
for masala paste
4 tsp coconut (grated)
2 tsp poppy seeds
5-6 cashew nuts
2 green chillies
coriander for garnishing
Directions
Grind all the ingredients for masala paste.
heat oil in a pan and fry onion and cardamons. add masala paste to onions and let it cook for 2-3 minutes.
Now add tomatoes curd chilli powder haldi and salt. cook until masala is done.
add corn and enough water for required consistency.

Lebanese Pizza

Moti Pulao

Ingredients

3 Cups of basmati rice
2 Cups of Mixed vegetable (peas, carrots, beans, cauliflower, capsicum)

Ingredients

For the dough:
1 cup All Purpose flour(Maida)
1/4 cup sunflower oil
little water
Stuffing:
1 cup Sweet corn
2 tbsp coriander leaves chopped finely
1 tsp dania powder
1/2 tsp amchur powder
1/2 tsp garam masala powder
1/2 tsp chaat masala powder
1 inch ginger finely chopped
2 greenchilli finely chopped
1/2 lemon squeezed(juice)
1/2 tsp jeera

Oil for frying

In 1 tsp oil,crackle cumin then add green chillies,ginger & sweetcorn,then all masalas.
Saute for few minutes as sweetcorn cooks very soon.Add salt and switch off the gas.

One boiled potato (mashed)

Garlic steam roast chicken

Ingredients

8 chicken pieces
5 tbsp Garlic paste
1 tbsp ginger paste
salt to taste
1 cup yogurt
1 tsp red chilli powder
1 tsp garam masala
1 mashed onion small
1 cup Vinegar (black)
1 tbsp black pepper
Water as required
Directions
Slightly mark cuts on chicken pieces
Add pepper powder, 1 glass water and vineger in a bowl and dip chicken in it for 2 hours.
Then shallow fry chicken and let it dry
Now add salt, red chilly, garam massala, mashed onion, ginger and garlic paste in yogurt and mix all.

Thai Praram Chicken

Ingredients

1 cup chicken breast (cut into slices)
2½ cups Spinach leaves (morning glory or water spinach or regular)
1 cup Peanut Sauce
1 tbsp. Ground peanuts
½ tsp. Salt
Directions
Steam cook spinach leaves, drain well and transfer onto serving plate making spinach bed.
Add water (½ cup) to a wok on a burner at medium heat.
Add chicken and sprinkle with salt. Stir thoroughly until chicken is cooked and water is almost dried.
Add peanut sauce and stir thoroughly.
Transfer onto spinach bed and sprinkle with ground peanut.

Fish in Garlic Butter Sauce

Ingredients

500 gm fish fillet
1tbsp chopped garlic
1 tsp crushed black pepper corns
1 cup finely chopped spring onion
100 gm butter
cornflour

Directions
Apply some salt on fish and keep it aside for some time.
Wash fish fillet with water and pat dry.
In a pan heat butter and put chopped garlic, fry it well.
Now onions and fry till onions become soggy.
Add fish then fry gently for a minute.
Add water and salt and cook it for 5 minutes.
Add pepper amd mix.
To thicken the sauce add little corn flour mix with water.

For white sauce:
1 tbsp flour (maida)
1 tbsp butter (it is in equal proportion to flour,can be taken more/less as per taste)
1 cup milk (both the ingredients can be varied as per person)
Pinch of black pepper powder
