Kiwi Barfi

Ingredients:

Khoya
Sugar
Ghee
Kiwi

Method:

1. Grate khoya and put it into a pan on slow fire. Blend in sugar and ghee and keep stirring until the mixture is soft and gives out an aroma.

2. Take it off the fire and spread it on a plate greased with ghee.

3. Allow it to set and then cut it with a knife into smaller pieces. Place kiwi slices between three pieces.

Aloo Tikki Chaat

Ingredients:

Potatoes –3 medium [boiled and peeled]
Bread – 2 slice [cut the brown sides and use the white part only]
Cilantro – 2 tbsp finely chopped
Green chilies –2 finely chopped
Roasted Cumin powder – 1 tsp
Black pepper –1/2 tsp
Salt as per taste
Oil for shallow frying

Chole Ingredients:

Kabuli Chana or Chole [Garbanzo beans]dry – 1.5 cup
Tea bags- 2
Dry Ingredients for gravy:

Red chili powder – 1 tsp
Whole garam masala – 1 tbsp
Turmeric powder -1/2 tsp
Coriander powder – 1 tbsp
Garam masala powder – ½ tsp
Chana Masala -1.5 tbsp

Aloo Kachori

Ingredients:

• 1/2 kg Potatoes
• 100 grams Arrowroot
• 1 fresh Coconut (grated)
• 2-3 Green Chilies
• 1 tsp Cardamom powder
• 3 tsp Sugar
• 3 tbsp Lemon Juice
• Salt to taste

Procedure:

• To make kachori covering, first boil and mash the potatoes. Mix it with 50 grams arrowroot, salt and knead it into a stiff dough.
• To make the filling, mix the grated coconut with crushed green chilies, sugar, lemon, cardamom and salt.
• To make kachori, take a small portion of the dough and pat between palms to make a small puri.

Orange and Mustard Salad

Ingredients

1. 6 oranges (or substitute the orange with 1 whole pineapple, peeled, cored and cut into 1-inch pieces)
2. 1/2 tsp salt
3. 1tsp brown sugar
4. 1tsp vegetable oil
5. 1tsp red mustard seeds
6. 1tsp wholegrain mustard
7. 1 dried red Kashmiri chilli, soaked in hot water and de-seeded
8. 1/4 tsp jeera (cumin seeds)
9. 2tbsp lime juice
10.2tbsp grated fresh coconut

Method:

1. Peel the oranges and divide them into segments removing the skin of each segment. This may seem like a laborious task, but is worth it.

Easy Chicken with a Twist

Ingredients

1. 1 kg chicken
2. 1 packet readymade chicken curry masala
3. 1/2 small papaya
4. 200 ml thin coconut milk
5. 2 Tbsp peanut butter
6. 3 spring onions, finely chopped
7. Salt to taste

Method:

1/ Churn the papaya in the mixie with the coconut milk, peanut butter and readymade masala.
2/ Pour the mix over the chicken and let it marinate for 10 minutes.
3/ Put into a deep pan, cover and cook on simmer for 45 minutes. The oil from the masala, coconut milk and peanut butter should come to the top.
4/ Garnish with spring onions.
5/ Serve with wholewheat bread.

Creamy mayonnaise pasta

Ingredients:

250 gms pasta
1 ½ cup mayonnaise
2 tbsp. vinegar
1 tsp. sugar
1 tsp. salt
1/4 tsp. ground black pepper
5-6 thinly sliced olive
1 cup chopped green or red capsicum
1/4 cup chopped onion
Oil for cooking

Procedure:

Cook macaroni in water; drain and rinse with cold water until completely cool.
Heat some oil in a pan and add all the cut vegetables. Stir until the vegetables are cooked. Now add mayonnaise, vinegar, sugar and salt. Add the pasta and mix thoroughly.

Chocolate Mint Cookies

Ingredients:

2 large eggs
3/4 cup butter
1 1/2 cup firmly packed dark brown sugar
1 cup semisweet chocolate chips
2 1/2 cups all purpose flour
1 1/4 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons water
Green mint wafers

Procedure:

In a saucepan over low heat, cook butter, sugar and water until butter is melted.

Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted.

Grilled veggie and Hummus wrap

Ingredients:

4 slices red onion (1/2 inch thick)
4 whole-grain flatbreads
1 red bell pepper (seeded and quartered)
1 eggplant (cut into slices)
2 tblspns olive oil
1/4 cup chopped fresh flat-leaf parsley
1/8 teaspoon kosher salt
1 container plain hummus

Method:

Heat a large pan over medium-high heat.

Brush bell pepper,onion, and eggplant with 1 tablespoon oil. Add onion and bell pepper to the pan and cook for about 3 minutes on each side.

Mughlai Roll

Ingredients
1 cup Gram flour
2 nos. Onion
2 nos. Tomato
2 pieces Indian Cottage Cheese(cubes)
1 no. Potato(boiled)
2 tbsps. Vegetable Oil
2 nos. Green Chilies
¼ tsp. Turmeric Powder
¼ tsp. Red Chilies(powder)
1 tsp. Coriander Seeds(powder)
¼ tsp. All spice powder
Salt to taste
Cilantro for frying

Directions
Make a batter by mixing besan and salt with water to a pouring consistency(like dosa batter)
Heat oil in a pan and add green chilis and chooped onions in it, saute for 2-3 min before adding chopped tomatoes in it, fry till the tomatoes turns soft.

Wheat-Oats Dosa

Ingredients

100 Wheat flour – sieved and dissolved in 3 cups water
1 cup Oats – powdered fine
1 chopped Big onion
1/2 tsp chilli powder
1 green chilli – chopped fine
1 tbsp chopped curry leaves
few coriander leaves
1 1/2 tsp salt
2 tbsp refined oil
Directions
Add all the other ingredients with dissolved wheat flour and mix well.
Heat Dosai Kadai (sim)and grease it with oil .Spread wheat dosa then turn over after a min and take that dosai after a min.
Similarly do other dosais too.

Yummy Burgers

Ingredients

400g lean minced mutton/minced chicken
Ground black peppercorns
Salt
100g breadcrumbs
1 egg
Sunflower oil
2 clove garlic, crushed and chopped
1 bunch coriander leaves, finely chopped
Small piece of fresh ginger
1tsp Worcestershire sauce
4 burger buns
2 tomatoes, sliced
¼ lettuce, shredded
4 cheese slices(optional)
ketchup, mayonnaise and mild mustard( for toppings)
Directions
Take the meat and season well with salt and pepper. Add the Worcestershire sauce ,chopped coriander, ginger and garlic and process until the mixture is smooth.

Butter Garlic Chicken

Ingredients

1/2 kg dressed chicken
250 gms white butter
2 cups finely chopped onions
1 tsp finely chopped garlic
1tbsp ginger garlic paste
1 tbsp black pepper powder
6-8 finely chopped green chillies
salt to taste
Directions
Wash and cut the chicken into 8 equal pieces.
Heat butter in a pan and add chopped onions.
Once the onion turns transluscent put ginger garlic paste and stir for 2 minutes.
Add the chicken pieces, cover and cook till it’s half done.
Put finely chopped garlic, green chillies, black pepper powder, salt and stir well.
Cook till done.

STUFFED DAHI VADAS

Ingredients

For the vadas:
¾ cup urad dal (split black lentils)
¼ tsp asafoetida (hing)
a pinch soda bi-carb
salt to taste
To be mixed together into a stuffing:
2 tbsp cashew nuts, chopped
2 tbsp sultanas (kismis)
1 tsp ginger-green chili paste

oil for deep frying
For serving
1 cup fresh curds, beaten
a pinch black salt (sanchal)
2 tablespoons sugar
salt to taste
For the garnish
chilli powder
roasted cumin seed (jeera) powder

Directions
Clean, wash and soak the urad dal for 2 to 3 hours.

Crunchy Corn Salad

Ingredients

2 lijjat papads (the big ones)
1½ cup of corn kennels
1 medium sized onion(chopped)
1 medium sized tomato(chopped)
1 cucumber(chopped)
1 tbsp lemon juice
1 tbsp olive oil(optional)
1 tsp garam masala
½ tsp chilli sauce
½ tsp chilli powder(if you like it spicy!!)
1½ tsp salt
Directions
Slice the papads into half.
Slightly bake the papads in a pan to make them soft.
Immediately fold them into small cones and keep them aside.
Now in a mixing bowl, put the corn kennels,chopped onion, chopped tomatoes and the chopped cucumbers.

Pineapple and Mango Jam

Ingredients

1 can of crushed drained pineapple
1 can of mashed can mangoes
2 cups of sugar of sugar
Water
½ cup of lime juice
Directions
Blend pineapple and mango so that there are no chunks.
Now in a non stick pan add sugar and water and cook till sugar carmalizes.
Now add Mango and Pineapple pulp to it.
Keep on stirring them and add lime juice.
Cook till it is fully cooked and turned thick.
Ladle in sterilized jars. Serve every morning on toast.

Spicy Dry Chicken

Ingredients

2 Kg Chicken, washed thoroughly and cut into cubed- pieces
4 Onion (medium), chopped into small cubes
2 tbsp Tomato paste
2 tbsp Ginger & Garlic paste
5 tbsp Oil
1/2 tsp Black mustard seeds
1/2 tsp Fennel seeds
1 tsp Red chilly powder
2 tbsp Coriander powder
1 tbsp Garam masala
1/4 tsp Turmeric powder
1/4 tsp Pepper powder
Salt – as rqd.
Coriander leaves- to garnish

Directions
In a pan, heat some oil and add the chicken pieces.
Wait till their water comes out off the chicken.
Then take out the chicken from the pan and keep aside.

Chatpati moong-masoor daal

Ingredients

1/2 cup dhuli masoor dal
½ cup dhuli moong dal
1 medium onion-chopped
1 medium tomato-chopped
1-2 pods garlic – chopped
1/2 inch ginger – chopped
salt- to taste
1/2 tsp turmeric
1 tsp- corriander powder
1/2 tsp- red chilly powder
1 whole dry red chilly
1-2 pinch asafoetida
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp- garam masala
4-5 kadhi leaves
fresh corriander-for garnishing

Ingredients

1/2 cup butter
1 cup desiccated coconut
2/3 cup broken and chopped walnuts
1 cup golden raisins
2 1/2 cup grated carrots
3 tsp mixed spices (cinnamon, nutmeg, ginger)
1 cup brown sugar
1 1/4 cup all purpose flour
1 tsp baking soda
2 beaten eggs
2 tsp of orange juice

Directions
Preheat the oven to 150 degrees C.
In a pan mix nicely the all purpose flour, mixed spices, baking soda, brown sugar, desiccated coconut and chopped walnuts.

Garlic Chicken Masala

Ingredients

750 gms chicken pieces – washed well
12 garlic pearls -chopped fine
1 big onion – finely chopped
1 tomato – finely chopped
2 green chillies-slit lengthwise
1/2 tsp coriander powder
1 1/2 tsp chilli powder
1/2 tsp ginger paste
2 1/2 to 3 tsp garlic paste(don’t add more)
1/2 tsp fresh pepper powder
1/4 tsp turmeric powder
1 tsp ground masala of (1/2 cinnamon stick,2cloves,2 green cardamoms,1/2 tsp saunf,1/2 tsp cumin seeds)
2 tsp refined oil
1 1/2 tsp salt – to taste
1/2 tsp lemon juice(don’t add more)
few coriander leaves
few fried curry leaves
few fried onions

Tikka Fish

Ingredients

1 Whole Fish
1 Tbsp Garam Masala
Cooking oil 3 tbsp
Grind to a fine paste:
1 1/2 Ginger piece
8 Garlic Cloves
3-3 Cubes of green papaya
1 Tbsp Turmeric powder
1/2 Tesp Cumin seeds
1 Tbsp Red chilies powder
2 Tbsp Lemon Juice
Salt to taste
Directions
Cut and scale the fish, then wash well.
Wipe dry, apply the ground paste all over, inside the stomach and head as well.
Make four ashes on either side of the fish with a sharp knife to allow the spices to permeate.
Let stand in a cool place for 1 hour.

Sitafal basundi

Ingredients

2 ltr Milk.
1/2 cup milk-maid.
2 custard apple.(de-seeded)
1/4 tsp cardamom powder.
few strands saffron.
your favourite choice of dry fruits.
1/2 cup sugar.
Directions
In a bowl mix sugar and custard apple and refrigerate for 1 hour.
In a huge vessel pour milk and bring it to a boil, minimise the heat and cook for 30-40 minutes or till creamy.
Add milk-maid,sugar,cardamom powder,saffron and dry fruits,turn off the heat.
Cool it on room temperature and mix custard apple in it.
Chill it and serve in bowls.

Easy Masala Stuffed Bhindhi

Ingredients

150 gm tender and big Bhindhis(15 nos atleast)
10 sambar onions-peeled
2 tbsp grated coconut
3 tbsp dry-roasted & peeled peanuts
1 tsp chilli powder
1/2 tsp coriander powder
1/2 tsp garam masala
1 cm size ginger piece-peeled
3 garlic cloves-peeled
1/2 tsp + 1/2 tsp cumin seeds
1/2 tsp mustard seeds
few curry leaves
few coriander leaves
1 or 1 1/2 tsp salt
2 tbsp refined oil
100 ml water

2 cups pasta(any type)
2 cups pizza sauce
2 tbsp chopped garlic
2 tbsp finely sliced onion
1/2 tsp oregano
1 tsp crushed red chillies
1 tbsp basil leaves
4 tbsp olive oil
1/4 cup water
1/4 cup chadder cheese(grated)
1/2 tsp salt
FOR MINCE BALLS:
1/2 kg chicken mince
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp oregano

Mix salt,black pepper powder and oregano in mince and male small balls with it.
Fill with open mouthed pot with water add 1 tbsp oil and salt and boil pasta in it.Sieve boiled pasta; mix 1 tbsp oil in it and keep aside.

Burhani

Ingredients

3 cup thick curd
3 cup milk/water
2 cloves of garlic
2 hot green chilli
a good bunch of fresh mint leaves
1/2 tsp red chilli powder
1/2 tsp roasted cumin powder
1 1/2 tsp salt
3 tsp sugar
1/4 tsp black salt(kala namak) (opt)
* u can adjust te amount of sugar & salt upon ur taste but the proportion of sugar should always be double the salt
