Ingredients
4 cups (about 2 lbs) of seeded and cubed watermelon
3 cups fresh raspberries
1/3 cup minced fresh mint
1 tbsp honey
2 tsp lime juice
Method:
Put the watermelon cubes into a large bowl and sprinkle over the minced mint.
Add the raspberries gently (do not mix) and sprinkle over some more mint.
Mix lime juice and honey together in a small bowl, using a fork. When combined, drizzle over the raspberries and watermelon.
Divide the watermelon cubes in a large bowl and sprinkle with minced mint. Top with raspberries and sprinkle with remaining mint. In a small bowl, mix honey and lime juice with a fork and drizzle over the berries and melon .
Refrigerate for half an hour to allow the salad to marinate and infuse the flavour throughout.
Ready to eat.
