Vegetable Kadhi

Ingredients
•Carrot,cut into small pieces 1/2 medium
•French beans cut into diagonal pieces 2-3
•Cauliflower florets 7-8 small
•Yogurt 1 cup
•Gram flour (besan) 2 tablespoons
•Turmeric powder 2 pinches
•Salt to taste
•Green chillies,chopped 1 teaspoon
•Extra virgin olive oil 2 tablespoons
•Garlic,chopped 1 tablespoon
•Ginger,chopped 1 tablespoon
•Cumin seeds 1 teaspoon
•Mustard seeds 1 teaspoon
•Curry leaves 15-20
•Green peas 1/4 cup
•Onion ,finely chopped 1 medium
•Dried fenugreek leaves (kasoori methi) 1 tablespoon
•Tomato,finely chopped 1 medium
•Cottage cheese (paneer) cubes 1 cup
•Fresh coriander leaves,chopped 2 tablespoons
Method
Place yogurt in a bowl, add gram flour, a pinch of turmeric powder, salt, green chillies, 2 cups water and whisk it and keep it aside. Heat extra virgin olive oil in a deep non stick pan. Add garlic, ginger, cumin seeds, mustard seeds and saute till fragrant.

Add carrot, beans, cauliflower florets, curry leaves, green peas, onions and mix well.Add a pinch turmeric powder, salt, dried fenugreek leaves and sauté for 2 minutes. Add tomato and sauté for 1 minute.
