Tomato and Olive Rice

Ingredients
•Basmati rice,soaked for 1 hour 1 1/2 cups
•Cherry tomatoes 10-12
•Black olives,sliced 1 bottle
•Green olives,sliced 1 bottle
•Extra virgin olive oil 2 tablespoons
•Garlic,chopped 1 teaspoon
•Onions,sliced 2 medium
•Black peppercorns 7-8
•Crushed black peppercorns to taste
•Vegetable stock 2 cups
•Tomato puree 1 cup
•Salt to taste
•Fresh basil leaves 20-25
Method
Set a rice cooker on cook mode and heat extra virgin olive oil in it. Add garlic, onions, cherry tomatoes, black peppercorns, crushed black peppercorns and mix well. Saute for 2-3 minutes.

Drain and add black and green olives and mix well. Drain and add rice, vegetable stock, tomato puree and mix well. Add salt and mix well. Roughly tear basil leaves and add. Mix well, cover and cook till rice is done. Serve hot.
