Ingredients
1. 2 multigrain atta rotis
2. 1 cup diced potatoes, boiled and sauteed lightly
3. 1tbsp tamarind pulp
4. 1tsp garlic paste
5. 1tbsp tomato ketchup
6. 1 green chilli, chopped
7. 1/2tsp jeera (cumin seeds)
8. Salt to taste
9. 2tsp honey mixed with vinegar
10.1tsp oregano or herb of your choice
11.1tbsp refined oil
Method:
1. In a pan, heat oil till it gives off smoke.
2. Add the jeera and as they splutter, toss in the potatoes. Saute for about a minute.
3. Then add the rest of the ingredients, except oregano, and toss till they are well combined.
4. Adjust seasoning. The potatoes should be sweet-sour.
5. To assemble the roll, lay the roti on a flat surface and add a scoop of potatoes down the middle and sprinkle oregano. Roll up and secure with a toothpick in the centre.
