Subzi Masala is a nutritious and tasty combo of veggies.

Ingredients:
Potatoes – 2 no, chopped
Carrot – 2 no, chopped
Beans – 10-12 no, chopped
Peas – 1/2 cup
Tumeric Powder – 1/2 teaspoon
Kasuri Methi – 1 tablespoon
Red Chilli Powder – 1 teaspoon
Ginger Garlic Paste – 1 teaspoon
Royal Garam Masala – 1 teaspoon
Salt – to taste
Oil – 1 tablespoon
Cinnamon – 1 inch Piece
Cloves – 3-4 no
Star Anise – 2 small piece
Cashewnuts – 5-6 no, roasted
Raisins – 4-5 no, roasted
To grind
Coriander Seeds – 1 tablespoon
Jeera – 3/4 teaspoon
Cashewnuts – 10 no
Onion – 3 small sized, chopped
Tomato Puree – 1/2 cup
Instructions:
Boil all the vegetables and keep it aside.
Dry Roast Coriander seeds and Jeera. Grind all the ingredients under ‘To grind’ to a fine paste by adding little water.
Heat oil in a pan, add cinnamon, cloves, star anise and fry till the aroma comes out of it.
Add ginger garlic paste, ground paste and saute it for sometime.
Add red chilli powder, turmeric powder, Royal Garam Masala and mix well.
Add all the vegetables and cook for 2 minutes.
Sprinkle the kasuri methi and mix well.
Garnish with roasted cashewnuts and raisins.
