Ingredients
1. 5 small eggplants
2. 2 large onions finely chopped
3. 1 tsp red chilli powder
4. 1 tsp dhania powder
5. 1/2 tsp garam masala
6. 1/2 cup roasted peanut powder
7. Salt to taste
8. 2 tsp Coriander leaves finely chopped
9. 4 tsp oil
10.11/2 cup water
Method:
1. Wash and dry eggplants and slit through the middle.
2. Take onions, add red chilli powder, garam masala powder, dhania powder, salt to taste, roasted peanut powder and mix well. Add 2 to 3 tsp of water in this mixture to make the spices blend well.
3. Now stuff the filling into the eggplant.
4. Heat oil in a nonstick pan. Once oil is hot add the leftover masala in oil. Fry it till the oil starts separating from the mixture.
5. Now add stuffed eggplants and cook covered till they are done.
6. Add water and cook till the gravy thickens.
7. Garnish it with coriander leaves.
