Shahi Paneer

Ingredients:

2 cups paneer (cubed)

1 cup almonds/cashews

2 tbsp paste of garlic, ginger and green chili

1 onion (finely chopped)

1 tsp garam masala

1 tsp cumin powder

2 tsp coriander powder

1 tsp black cumin seeds (shahi jeera)

2 tsp white pepper powder

1 cup milk

1 cup yoghurt

1 pinch sugar

2 tbsp oil

Salt as per taste

Cilantro for garnishing

Method:

Take milk and soak cashews/almonds in it for 10-15 minutes. Then make a smooth paste by grinding it in a blender.

In a pan, heat some oil, add the black cumin seeds and allow them to splutter. Then add some onions and fry. Next add the paste of ginger, garlic and chili till the raw smell disappears.

Then add yoghurt, garam masala, coriander powder and cumin powder and cook for some time. Next add the milk and cashew paste. Water can be added as required. Bring the mixture to a boil. Gravy will begin to thicken and water can be added as needed.

Now add pepper powder, sugar and salt and allow it to simmer for around 15-20 minutes. Once it is cooked, add the cut paneer and boil for about 5 minutes. Garnish with toasted almonds/cashews and fresh cilantro. Serve hot with nan or pulav.
