Recipe: Saboodana Kheer

On the occasion of Shivaratri, try this delicious kheer!

Ingredients:

Milk, 4 cups
Sago granules, 1 tablespoon
Sugar, ¾ cup
Cardamom powder, ¼ teaspoon
Water, 1 cup

Procedure:

Wash and drain the sago granules, and keep them aside for about ten minutes.
When the moisture is absorbed, loosen the grains.

Heat the water and add the sago granules. Bring the mixture to a boil while stirring.
Reduce the heat, on a simmering flame, cook for about 5-6 minutes. Add a tablespoon more of water if the need be.
Add the milk and bring the mixture back to a boil.

Simmer for about 5 minutes. Add the sugar and cardamom powder.

Stir it occasionally. Cook over a simmering flame till the sago granules are cooked. Make sure that the granules don’t turn mushy.

Check the granules by pressing it between the thumb and finger. It should flatten on pressing.

Serve the delicious kheer hot, garnish with nuts if desired.
