Recipe: Potato Bharta

Aloo ka Chokha is synonymous with Bihar. It is a savoury Bharta made in two ways and goes well with most signature dishes of the state like Khichri and Litti. Aloo ka chokha along with rice, lentil and pickle is a common favourite of the locals.

Fried Chokha

Ingredients:

4 medium sized potatoes, boiled, peeled and mashed
1 medium sized chopped onion
2 tsp chopped garlic
3 whole red chillies
1 tsp cilantro leaves
4 tsp mustard oil
Salt to taste

Procedure:

Heat oil in a shallow pan. Add red chillies, onions and garlic. Sauté till the onions become brown. Add potatoes, salt and cook on low flame for ten minutes. Now put cilantro leaves and mix. Serve with Khichri or Litti. It also serves as an excellent filling for paranthas and even sandwiches.

Plain Chokha

Ingredients:

4 medium sized potatoes, boiled, peeled and mashed
1 medium sized finely chopped onion
2 tsp finely chopped garlic
3 green chillies finely chopped
1 tsp cilantro leaves
4 tsp mustard oil
Salt to taste

Procedure:

Mash potatoes. Add all the ingredients. Mix well so that the bharta becomes smooth. Serve with rice and lentil, khichri or litti.
