Peas & Tomato Rice is spicy and tangy. It makes a great one-dish meal.

Ingredients:
Basmati Rice – 1 1/2 cups, soaked in 10 mins
Green Peas – 1 1/2 cup
Tomatoes – 2 medium size, chopped
Onions – 1 large size, sliced
Jaggery – 1/2 teaspoon
Cashewnuts – a handful
Salt – to taste
Red Chilli Powder – 1 1/2 teaspoon
Garam Masala – 3/4 teaspoon
Coriander Powder – 1/2 teaspoon
Turmeric Powder – 1/4 teaspoon
Jeera – 1/2 teaspoon
Coriander Leaves (cilantro) – a handful
Coconut Gratings – 2 tablespoon
Ghee – 2 tablespoon
Instructions:
In a bowl, add peas, coconut gratings, tomatoes, red chilli powder, turmeric powder, garam masala, coriander powder. Mix well and keep aside for 10 minutes.
Heat a pan, add ghee and fry the cashwenuts. Keep it aside.
Heat ghee in pressure cooker, add jeera, onions and fry till it is translucent.
Add the tomato mixture, mix well and fry for a while.
Add basmathi rice, 2 3/4 cup of water, mix well and pressure cook until 1 whistle.
Add the fried cashews and serve hot.
