Ingredients
•Peanut butter 2 tablespoons
•Flat noodles,boiled 2 cups
•Spring onions with greens 7-8
•Ginger,chopped 1 inch piece
•Garlic,chopped 6-7 cloves
•Fresh red chillies,chopped 2
•Oil 1 tablespoon
•Dark soy sauce 1/4 cup
•Green capsicum,cut into strips 1/2
•Brown sugar 2 tablespoons
•Vinegar 1 tablespoon
•Bean sprouts 1/2 cup
•Roasted peanuts 1/4 cup
Method
Slice spring onion bulbs. Heat oil a non-stick wok, add spring onions and sauté for half a minute. Add ginger, garlic and red chillies and sauté for half a minute.
Add dark soy sauce and quarter cup water and stir. Add peanut butter and another quarter cup water and stir to blend well. Add brown sugar and vinegar and mix.
Add flat noodles and capsicum and mix. Chop spring onion greens and add along with bean sprouts. Toss and mix well. Add roasted peanuts and mix. Serve hot.
