Ingredients
1. 6 oranges (or substitute the orange with 1 whole pineapple, peeled, cored and cut into 1-inch pieces)
2. 1/2 tsp salt
3. 1tsp brown sugar
4. 1tsp vegetable oil
5. 1tsp red mustard seeds
6. 1tsp wholegrain mustard
7. 1 dried red Kashmiri chilli, soaked in hot water and de-seeded
8. 1/4 tsp jeera (cumin seeds)
9. 2tbsp lime juice
10.2tbsp grated fresh coconut
Method:
1. Peel the oranges and divide them into segments removing the skin of each segment. This may seem like a laborious task, but is worth it.
2. Puree the ingredients for the spice paste in a blender until smooth with 1tbsp of water. Add this to the oranges and mix well without smashing the segments.
3. Add salt, sugar and lime juice and the wholegrain mustard. Heat the oil and throw in the mustard seeds; once they pop, pour on top of the salad.
4. Mix well and chill before turning out on a serving plate.
