Ingredients
Oats ( powdered ) – 2 cups
Corn ( cooked ) – 1/4 cup
Peas ( cooked ) – 1/4 cup
Cabbage ( cut finely ) – 1/4 cup
Onion – 1
Capsicum – 1
Tomato – 1
Coconut ( grated ) – 1/4 cup
Ginger green chilli paste – 2 tsp
Lime juice – 1 tsp
Turmeric powder – 1/4 tsp
Chilli powder – 1/4 tsp
Mustard – 1/2 tsp
Cumin – 1/2 tsp
Coriander leaves – a handful
Oil – as needed
Salt – as needed
Method
1. Cut onion, tomato, capsicum finely.
2. Heat oil in a frying pan.
3. Add mustard, cumin and when they splutter, add onion, tomato, capsicum, cabbage, ginger chilli paste, turmeric powder, chilli powder and cook.
4. When the vegetables are cooked, add corn, peas and 4 cups of water.
5. When water starts boiling, add oats, salt and cook.
6. When oats are cooked and water absorbed, switch off the stove.
7. Add lime juice, coconut, coriander leaves, stir well and serve.
