Mango Kheer

Ripe Mango Puree- 4 cups
Milk- 1ltr
Cashew Nuts- 1/2 cup
Cardamom- 1tsp (crushed)
Ghee- 3-4tbsp
Saffron- 1tsp
Almonds- 1/2 cup
Raisins- 1/2 cup
Basmati Rice- 1 cup
Apples- 2-3 (finely sliced)
Sugar- 1 cup


Take a deep bottomed frying pan. Pour the milk into it and let it simmer on a low flame.
Add the crushed cardamom seeds and stir well. Add the mango puree, cashew nuts,  raisins and almonds into the milk.
Take another and add ghee to it. Now add the rice and stir for 2-3 minutes over a low flame.
Add the rice into the milk (with saffron) and let it simmer for another 4-5 minutes.
Put a lid over the pan of milk and keep it on simmer and allowed the rice boil properly for 10 minutes.
See  the whole mixture if turned creamy and then turn off the flame.
Cool the mango kheer toroom temperature  and then in refrigerator for further cooling.

Serve the chilled Mango Kheer garnished with the chopped apples.
