Ingredients:
450 gms peeled cooked shrimp
2 medium firm-ripe avocados
2 large firm-ripe mangoes
2/3 cup Scallion (green onion)
1 Tbsp of sugar
3 Tbsp of fresh lime juice
1 Tbsp green chili
2 Tbsp of grapeseed oil
Method:
In a large bowl, whisk together lime juice, oil, and sugar until sugar dissolves.
Dice mangoes and avocados into cubes and add to bowl. Add green onion, cilantro, chili and shrimp.
Mix gently. Serve or cover and chill for up to 1 hour.
