Ingredients
1. 1 kg chicken
2. 1 packet readymade chicken curry masala
3. 1/2 small papaya
4. 200 ml thin coconut milk
5. 2 Tbsp peanut butter
6. 3 spring onions, finely chopped
7. Salt to taste
Method:
1/ Churn the papaya in the mixie with the coconut milk, peanut butter and readymade masala.
2/ Pour the mix over the chicken and let it marinate for 10 minutes.
3/ Put into a deep pan, cover and cook on simmer for 45 minutes. The oil from the masala, coconut milk and peanut butter should come to the top.
4/ Garnish with spring onions.
5/ Serve with wholewheat bread.
