Ingredients
•Boneless chicken breast,cut into small cubes 1
•Oil 2 tablespons + to deep fry
•Onion ,chopped 2 medium
•Garlic,chopped 2 tablespoons
•Ginger,chopped 1 tablespoon
•Salt to taste
•Crushed black peppercorns 1/2 teaspoon
•Peanuts,Roasted and peeled 3 tablespoons
•Green chillies,chopped 2
•Lemon juice 2 teaspoons
•White bread slices 4
Method
1. Heat sufficient oil in a kadai.
2. Heat 2 tbsps oil in a non-stick pan, add onions, garlic and ginger and saute.
3. Add chicken, salt and crushed black peppercorns and saute for 2 minutes. Cover and cook.
4. Crush peanuts. Add green chillies to the pan and mix. Cover and cook till done. Transfer into a bowl.
5. Add crushed peanuts and lemon juice and mix well.
6. Pour water into another bowl. Trim the edges of the bread slices and dampen them in the water. Squeeze extra water by pressing between your palms.
7. Place chicken mixture in the centre of each slice, bring in the edges and shape into oval croquette.
8. Slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
9. Serve garnished with onion roundels, thin strips of green capsicums and a fresh red chilli flower.
