Ingredients
300gm boneless chicken flattened and sliced
3 Tbsp oil
8 whole small dried red chillies
1 1/2 Tbsp finely chopped garlic
1 Tbsp oyster sauce
1 Tbsp fish sauce
4 Tbsp chicken stock
60 gm roasted unsalted cashew nuts
3 spring onions cut in 2.5 cm pieces
1/2 tsp sugar
1 tsp roasted chilli paste
2 red capsicum sliced-optional
Spring onion green to garnish
Method
Heat 1 1/2 Tbsp oil in a pan. Stir fry chillies till cooked. Make sure that won’t get burn Remove from pan and keep aside.
Now in the remaining oil, stir fry garlic until golden.
The add chicken slices, oyster and roasted chilli paste, fish sauces and sugar. Stir fry until chicken is cooked.
Lower the flame. Add stock and cook 5 minutes stirring.
Add cashews nuts, red chillies, capsicum and spring onion white, when the chicken is thoroughly cooked. Stir well.
Garnish with green spring onion.
Serve hot hot Chicken Chillies Cashews.
