Bean Salad

Ingredients

1. 1 Cucumber
2. 1 medium sized tomato
3. Iceberg lettuce leaves, shredded
4. 1/2 c green moong sprouts
5. 1 c kidney beans cooked
6. 1/2 c millet cooked
7. 3 Tbsp balsamic vinegar
8. 3 Tbsp extra-virgin olive oil
9. 1 Tbsp lemon juice
10. 4 garlic pods, chopped
11. Any herbs on hand dried, or fresh like thyme, oregano, parsley
12. Salt and pepper to taste

Method:

1. Slice cucumber, tomato and lettuce

2. Add all the sliced vegetables, sprouts, beans and millet into a bowl. Mix well.

3. Whisk together balsamic vinegar, olive oil, salt, pepper, lemon juice, garlic and herbs.

4. Pour the dressing over the vegetable and bean mixture, toss well.

5. Optionally, add hummus or vegan cheese or vegan mayonnaise for topping.
