Corn Salad

Ingredients:

• 100 g sweet corn kernels, boiled
• 50 g tomatoes, finely chopped
• 100 g coriander, finely chopped
• 50 g lemons, juiced
• 50 ml olive oil
• 10 g black olives, deseeded
• 20 g parsley, chopped
• 50 g raw mango, peeled, deseeded and finely chopped
• 40 g onions, finely chopped
•Salt and pepper to taste
• Chilli flakes or pizza seasoning to taste

Method

• In a mixing bowl, make a dressing with the olive oil, lemon juice, parsley and chilli flakes .
• Put the vegetables in another bowl.
• Pour the prepared dressing over the vegetables and serve chilled.
